Revisiting a beloved pork dish from 10 years ago, I’ve recreated this delicious stir-fry with the addition of crisp bean sprouts and a spicy twist. The secret to its fiery flavor? Cheongyang chili powder! Prepare for a wonderfully appetizing meal.

Main Ingredients

  • Pork 500g (sliced for bulgogi or japchae is recommended)
  • Bean Sprouts 250g (washed thoroughly under running water)
  • Green Onions 1 handful (approx. 100g, cut into large pieces)

Spicy Sauce

  • Gochujang (Korean chili paste) 2 Tbsp
  • Gochugaru (Korean chili powder) 1 Tbsp (use Cheongyang chili powder for extra spiciness)
  • Cheongyang Chili Pepper 1 (seeds removed and finely minced)
  • Minced Garlic 0.5 Tbsp
  • Oligosaccharide 1 Tbsp (for shine and sweetness)
  • Sesame Oil 1 Tbsp
  • Sugar 1 Tbsp

Pork Marinade

  • Soy Sauce (jin ganjang) 1 Tbsp
  • Cooking Wine (mirin, etc.) 1 Tbsp
  • Black Pepper a pinch
  • Salt 0.5 Tbsp

Cooking Instructions

Step 1

First, marinate the 500g of pork by mixing it with 1 Tbsp soy sauce, 1 Tbsp cooking wine, a pinch of black pepper, and 0.5 Tbsp salt. Let it sit for 10 minutes. This step tenderizes the pork and enhances its flavor.

In a separate bowl, combine all the ingredients for the spicy sauce: 2 Tbsp gochujang, 1 Tbsp gochugaru, 1 minced Cheongyang chili pepper, 0.5 Tbsp minced garlic, 1 Tbsp oligosaccharide, 1 Tbsp sesame oil, and 1 Tbsp sugar. Mix well until the sugar is dissolved. Making the sauce in advance allows the flavors to meld beautifully.

Heat a pan over medium-low heat and add a little cooking oil. Add the large pieces of green onion and stir-fry until fragrant, about 2-3 minutes. This will create a flavorful green onion oil, preparing the pan for the pork.

Once the green onion oil is fragrant, add the marinated pork to the pan over high heat. Break up any clumps with chopsticks or a spatula as you stir-fry. Cook until the surface of the pork turns white.

When the pork is about halfway cooked, add half of the prepared spicy sauce (approx. 1/2) and stir-fry together with the pork for 1-2 minutes, ensuring the sauce coats the meat evenly.

When the pork is almost fully cooked, add the washed and drained 250g of bean sprouts and the remaining half of the sauce. Stir-fry vigorously over high heat. Cooking quickly over high heat is key to keeping the bean sprouts crisp and fresh. Continue to stir-fry until the bean sprouts are tender-crisp and the sauce is well combined. Remove from heat and serve.
