A Hearty One-Pot Meal: Savory Stewed Pollack Inspired by Jjimdak Recipe
We’ve brought the special touch of a Jjimdak (braised chicken) recipe to a fish dish, creating a ‘Eo-jjim’ (fish stew) that is both spicy and filled with the savory broth of tender pollack. This stew features a wonderful harmony of sweet and spicy sauce with soft pollack, making it an irresistible ‘rice thief’ that you can’t stop eating. It’s a hearty and unique dish perfect for the whole family to enjoy.
Main Ingredients- 1 whole cleaned pollack
- 1/4 Daikon radish
- 2 Sweet potatoes
- 1 Onion
- 1 Green onion
- Wide glass noodles (to taste)
- 1-2 Vietnamese chili peppers (to taste)
- 1-2 Korean green chili peppers (to taste)
- Rice water (plenty)
Spicy & Sweet Seasoning- 7 Tbsp Soy sauce
- 2 Tbsp Minced garlic
- 1 Tbsp Minced ginger
- 0.5 Tbsp Doenjang (soybean paste)
- 2 Tbsp Plum extract (Maesil cheong)
- 2 Tbsp Sugar
- 2 Tbsp Mirin (rice wine)
- 1 Tbsp Fish sauce (for soup)
- 1 Tbsp Oyster sauce
- 7 Tbsp Soy sauce
- 2 Tbsp Minced garlic
- 1 Tbsp Minced ginger
- 0.5 Tbsp Doenjang (soybean paste)
- 2 Tbsp Plum extract (Maesil cheong)
- 2 Tbsp Sugar
- 2 Tbsp Mirin (rice wine)
- 1 Tbsp Fish sauce (for soup)
- 1 Tbsp Oyster sauce
Cooking Instructions
Step 1
Prepare all your ingredients. You’ll need fresh pollack, vegetables, and glass noodles.
Step 2
It’s convenient to buy pre-cleaned pollack from the market. Rinse the pollack thoroughly under cold running water to remove any fishy odor. Then, soak it in rice water for a while to make it tender. Rice water is excellent for removing unwanted smells from fish.
Step 3
Soak the wide glass noodles in lukewarm water for at least 30 minutes until they become soft and pliable. Ensure they are fully rehydrated.
Step 4
Prepare the vegetables. Cut the sweet potatoes, onion, and chili peppers into bite-sized pieces. Slice the daikon radish into larger pieces, as it will be placed at the bottom of the pot to absorb the flavors.
Step 5
Let’s make the key seasoning for this delicious pollack stew! Combine 7 Tbsp soy sauce, 2 Tbsp minced garlic, 1 Tbsp minced ginger, 0.5 Tbsp doenjang, 2 Tbsp plum extract, 2 Tbsp sugar, 2 Tbsp mirin, 1 Tbsp fish sauce, and 1 Tbsp oyster sauce. Mix well. (Note: This seasoning is adapted from a Jjimdak recipe.)
Step 6
Lay the larger-cut daikon radish pieces at the bottom of a pot. Add a dashima (kelp) or anchovy packet to make a broth, and pour in the rice water. This method infuses the radish with umami and makes the broth more refreshing. Simmer for about 10 minutes to create the broth.
Step 7
Add the prepared pollack, the seasoning mixture, and the sliced sweet potatoes to the broth. Bring to a boil over high heat and cook for about 20 minutes. This allows the pollack to cook through and absorb the delicious sauce.
Step 8
Add the Vietnamese chili peppers for an extra kick of spiciness. While dried chilies are often used in Jjimdak, using Vietnamese chilies will give you a more intense and fiery heat. Add them now!
Step 9
Once the daikon radish is tender and has turned a brownish hue, add the sliced onion and Korean green chili peppers. Reduce the heat to medium and simmer for at least 10 more minutes. This allows the natural sweetness and aroma of the vegetables to meld into the stew.
Step 10
Finally, add the rehydrated wide glass noodles. Gently mix everything together, allowing the noodles to soak up the flavorful sauce as it simmers and bubbles. The noodles will become even more delicious coated in the sauce.

Once everything is cooked, drizzle a little sesame oil just before serving. The fragrant aroma of sesame oil will enhance the overall flavor of the pollack stew, making it even more delightful.
