Spicy Perilla Leaf Stir-fry: A Delicious Side Dish!
Easy and Delicious Perilla Leaf Stir-fry Recipe
Enjoy the fresh aroma of perilla leaves combined with a sweet and spicy seasoning! This recipe uses pre-blanched perilla leaves bought from the market for a quick yet flavorful side dish. It’s perfect with rice.
Main Ingredients- Blanched Perilla Leaves 500-600g
- Scallions, a small amount
Seasoning Ingredients- Soup Soy Sauce 2-3 Tbsp
- Regular Soy Sauce 2 Tbsp
- Minced Garlic 1.5 Tbsp
- Gochugaru (Korean Chili Flakes) 2-3 Tbsp (adjust to taste)
- Sugar 1 Tbsp
- Olive Oil 2-3 Tbsp (for stir-frying and finishing)
- Sesame Oil 1 Tbsp
- Toasted Sesame Seeds, a small amount
- Soup Soy Sauce 2-3 Tbsp
- Regular Soy Sauce 2 Tbsp
- Minced Garlic 1.5 Tbsp
- Gochugaru (Korean Chili Flakes) 2-3 Tbsp (adjust to taste)
- Sugar 1 Tbsp
- Olive Oil 2-3 Tbsp (for stir-frying and finishing)
- Sesame Oil 1 Tbsp
- Toasted Sesame Seeds, a small amount
Cooking Instructions
Step 1
Gently rinse the blanched perilla leaves, purchased from the market or store, in cold water 1-2 times, shaking them softly. After rinsing, firmly squeeze out as much water as possible by hand. (Tip: Check if any other greens are mixed in with your perilla leaves when you buy them!)
Step 2
Wash the scallions thoroughly and chop them finely. They will add a wonderful aroma.
Step 3
To the squeezed perilla leaves, add the chopped scallions and all the prepared seasoning ingredients (soup soy sauce, regular soy sauce, minced garlic, gochugaru, sugar). (Tip: Set aside the olive oil, sesame oil, and sesame seeds for the final step.)
Step 4
Gently mix the ingredients with your hands, ensuring the seasoning coats the perilla leaves evenly. Let it sit for 5-10 minutes to allow the flavors to meld.
Step 5
Heat a pan over medium-high heat, add 1-2 Tbsp of olive oil, and then add the seasoned perilla leaves. Stir-fry lightly, mixing the ingredients as they cook until the leaves slightly wilt. Once wilted, pour in half a cup of water (about 100ml) and let it simmer together. (Tip: Adding a little more olive oil at the end will give the dish a nice sheen and make it look more appetizing.)
Step 6
During the stir-frying process, if you feel the color or spiciness from the gochugaru isn’t quite right, add more according to your preference. Taste the dish and adjust the seasoning with more soup soy sauce or regular soy sauce if needed.
Step 7
Since the perilla leaves are already blanched, they don’t require long cooking. Stir-fry briskly over high heat for just 3-5 minutes. Just before turning off the heat, drizzle in 1 Tbsp of sesame oil and sprinkle with toasted sesame seeds to finish. Your fragrant and delicious Perilla Leaf Stir-fry is ready!
