Dressing Ingredients

  • 1 Tbsp Doenjang (fermented soybean paste)
  • 0.5 Tbsp sugar (adjust to taste)
  • 0.5 Tbsp minced garlic
  • 0.5 Tbsp coarse gochugaru (Korean chili flakes, adjust to taste)
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds

Wash the Mi-in Gochu peppers thoroughly and remove the stems. Slice them diagonally into about 0.5cm thick pieces. Slicing them at this thickness will help maintain their crispness and prevent a raw taste. Ensure the pieces are uniform in size for even seasoning.

In a mixing bowl, combine 1 Tbsp of Doenjang, 0.5 Tbsp of sugar, 0.5 Tbsp of minced garlic, and 0.5 Tbsp of coarse gochugaru. Mix these ingredients well to create the base dressing. You can adjust the amount of sugar and gochugaru according to your preference for sweetness and spiciness.
