Main Ingredients

  • 2 packs Enoki mushrooms
  • 2 King oyster mushrooms
  • 300g (1 block) Tofu
  • 1/2 Zucchini
  • 1/4 Onion
  • 1 stalk Green onion
  • 2 Korean green chilies (Cheongyang peppers)
  • 1 Red chili

Cooking Instructions

Step 1

First, trim the base of the enoki mushrooms and gently rinse them under running water. Then, carefully separate them into individual strands by hand. For the king oyster mushrooms, clean them and thinly slice them into strips about 0.5 cm thick.

Cut the tofu into bite-sized pieces, about 0.5 to 1 cm thick. Slice the zucchini into similar thickness half-moon shapes. Thinly slice the onion. Separate the white and green parts of the green onion and slice them diagonally. Remove the stems from the Korean green chilies and red chili, and slice them diagonally as well.

In a pot or a shallow stew pot, combine the enoki mushrooms, king oyster mushrooms, tofu, zucchini, and onion. Set aside the green parts of the green onion and the chilies for now.

Sprinkle the gochugaru (2.5 Tbsp), minced garlic (1 Tbsp), and saeujeot (1 Tbsp) evenly over the ingredients in the pot. Saeujeot will add a lovely umami depth to the broth.

Pour in the kelp and anchovy broth (5 cups), ensuring the ingredients are well covered. This broth will infuse the stew with a rich flavor.

Bring the stew to a boil over high heat. Once it reaches a rolling boil, reduce the heat to medium or low and let it simmer until all ingredients are tender. Finally, add the reserved green parts of the green onion and the sliced chilies, and simmer for another few minutes. Taste the broth and adjust the seasoning with salt and pepper if needed. Your delicious spicy mushroom stew is ready!
