Do you have some mala sauce lingering in your fridge? It’s time to bring it out and create a mouthwatering Mala Shrimp Stir-Fry! This recipe combines the addictive numbing spice of mala with succulent shrimp for a dish that’s perfect as a side dish or a delightful appetizer with drinks. Let’s get cooking!
Ingredients- 700g fresh shrimp, peeled and deveined
- 100g ground pork
- 8 cloves garlic, thinly sliced
- 1 onion, thinly sliced
- 1.5 stalks of green onion (scallion), cut into 5-6cm pieces
- 8 Tbsp olive oil
- 2 pinches black pepper
- 1 Tbsp sugar
- 40g store-bought mala sauce
- 2 Tbsp oyster sauce
Cooking Instructions
Step 1
First, carefully remove the heads from the shrimp. The heads are not used in this recipe.
Step 2
Next, remove the deveining vein (intestinal tract) from the shrimp bodies. You can do this by gently pressing on the body near the tail and pulling.
Step 3
Make a shallow cut along the back of the deveined shrimp. Then, insert a skewer into the shrimp from the tail end and push it through to the back to extract the digestive tract. This step helps to remove any gaminess and ensures a tender texture.
Step 4
Prepare the ground pork. Having it ready will make the cooking process smoother.

Thinly slice 8 cloves of garlic. The garlic will add a wonderful aromatic depth to the dish.

Thinly slice 1 onion. The onion’s natural sweetness will balance the spiciness of the mala sauce.

Cut 1.5 stalks of green onion into 5-6cm pieces. These will add a fresh, aromatic element to the stir-fry.

Heat a wok or large skillet over high heat. Add 8 tablespoons of olive oil, then add the sliced garlic, sliced onion, and cut green onions. Stir-fry until the aromatics become fragrant and the vegetables begin to soften.
Step 9
Once the vegetables are fragrant, add the ground pork, 2 pinches of black pepper, and 1 tablespoon of sugar. Continue to stir-fry until the pork is fully cooked. The sugar enhances the overall savory flavor.
Step 10
When the pork is cooked, add the prepared shrimp, 40g of mala sauce, and 2 tablespoons of oyster sauce. Stir-fry over high heat for about 1-2 minutes, ensuring everything is well coated with the sauce. This quick cooking time will keep the shrimp perfectly tender and succulent. Serve immediately while hot!
