Ingredients

  • Pork spare ribs 600g
  • Mala sauce 90g
  • Dried bird’s eye chilies 20 (or adjust to taste)
  • Minced garlic 30g (approx. 3 Tbsp)
  • Green bell pepper 30g (approx. 1/4)
  • Red bell pepper 50g (approx. 1/3)
  • Onion 50g (approx. 1/4)
  • Bay leaves
  • Scallions (for garnish)
  • Sesame seeds (for garnish)

Cooking Instructions

Remove the clumped fat from the front of the pork ribs and the thin membrane from the back. Leaving the membrane on can make the meat tough, so it’s best to carefully peel it off with a knife or scissors. If this step seems tedious, you can remove it while rinsing the ribs in cold water.

Carefully cut between the bones of the ribs. Pre-cutting them like this can shorten the blood-draining time and help the sauce penetrate more evenly. This is faster than draining the whole rack.

In a large pot, add enough cold water to cover the ribs. Include bay leaves, whole peppercorns (optional), peeled garlic cloves, and the white parts of green onions. Bring to a boil over high heat. Once boiling, add the ribs, reduce to medium-low heat, and simmer for 30-40 minutes until the ribs are tender. Skim off any foam that rises to the surface for a clearer broth.
