These simple potato side dishes are a family favorite, always delicious and perfect for everyday meals. We’ve added spicy Korean green peppers and a savory soy sauce base to create this delightful braised potato dish. It’s a comforting and flavorful banchan that pairs wonderfully with rice.
Main Ingredients- 3 medium potatoes
- 10 Korean green peppers (Ggwari-gochu)
- 2 tablespoons cooking oil
Braising Sauce- 120ml water (approx. 1/2 cup)
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 2 tablespoons corn syrup (or rice syrup)
- 2 teaspoons vinegar
- 1 pinch black pepper
- A little toasted sesame seeds
- 1 tablespoon sesame oil
- 120ml water (approx. 1/2 cup)
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 2 tablespoons corn syrup (or rice syrup)
- 2 teaspoons vinegar
- 1 pinch black pepper
- A little toasted sesame seeds
- 1 tablespoon sesame oil
Cooking Instructions
Step 1
Prepare the main ingredients: potatoes and Korean green peppers. Wash the green peppers thoroughly, trimming off the stems. Peel the potatoes.
Step 2
Cut the peeled potatoes into bite-sized pieces, about 2-3 cm cubes. If cut too small, they might break apart during cooking. Cut the Korean green peppers into 2-3 cm lengths, either diagonally or in half. This helps them absorb the sauce evenly and cook faster.
Step 3
Heat 2 tablespoons of cooking oil in a pan over medium heat. Add the cut potatoes and stir-fry for 1-2 minutes until the edges start to look slightly translucent or lightly golden. This step coats the potatoes in oil, helping them maintain their shape and giving them a nice sheen after braising.
Step 4
Pour 120ml of water into the pan, enough to mostly cover the potatoes. Add the soy sauce, brown sugar, and corn syrup according to the recipe. Stir everything gently to combine the sauce ingredients.

Cover the pan and simmer over medium heat for about 5 minutes, or until the potatoes are partially cooked. After 5 minutes, remove the lid and evenly distribute the cut Korean green peppers over the potatoes.

Continue to cook uncovered for another 3 minutes. Stir occasionally while the sauce reduces to a near-dry consistency. Braising until the sauce is almost gone allows the peppers and potatoes to absorb all the delicious flavor.

Once the sauce has thickened, add the 2 teaspoons of vinegar and stir-fry over high heat for just 10 seconds. The vinegar adds a bright, appetizing flavor and balances the richness. Turn off the heat and sprinkle in a pinch of black pepper for extra aroma.
