Main Ingredients- 600g chicken, cut into pieces
- 600ml water
- 1 stalk of green onion
- 1/2 onion
- 2 potatoes
- 1/2 carrot
Spicy Seasoning- 1 Tbsp minced garlic
- 4 Tbsp gochugaru (Korean chili flakes)
- 10 Tbsp soy sauce
- 1 Tbsp sugar
- 1/2 tsp black pepper
- Pinch of salt (to taste)

Cooking Instructions
Step 1
First, prepare the vegetables that will add flavor and texture to your Dakbokkeumtang. Peel the potatoes and cut them into 6 large pieces. Cutting them too small can cause them to break apart during cooking.

Slice the onion into thick strips. Larger pieces will hold their shape better in the stew.
Step 3
Cut the carrot into pieces similar in size to the potatoes. Carrots add natural sweetness and a lovely color to the dish.

Cut the green onion into large diagonal pieces. This will be added at the end to infuse its aroma.

Now, let’s prepare the chicken. Rinse the chicken pieces thoroughly under running water. Bring a pot of water to a rolling boil, then add the chicken and blanch for 1-2 minutes. This step is crucial for removing impurities and any gamey smell from the chicken.

Discard the blanching water. In a clean pot, add 600ml of fresh water for the stew. Then, generously add 1 tablespoon of minced garlic, which is key for the stew’s rich flavor.

Once the water starts to boil, add the prepared carrots, onions, and potatoes first. Let them simmer for about 5 minutes until they begin to soften. Then, add all the seasoning ingredients: 1 tablespoon of sugar, 4 tablespoons of gochugaru, and 10 tablespoons of soy sauce. Stir everything well and let it simmer until the flavors meld together. (Taste and adjust with salt or more soy sauce if needed.)

Finally, add the large pieces of green onion and simmer for another moment. The fresh aroma of the green onion will enhance the broth. Also, add 1/2 teaspoon of black pepper at this stage.
