This recipe utilizes the rest of a can of Spam to create a delicious kimchi stew, a perfect partner for rice. Adding soft tofu alongside the salty Spam creates an even more delightful flavor. The combination of savory Spam, tender tofu, and well-fermented kimchi results in a deep, satisfying taste. This hearty and spicy stew is a guaranteed hit with the whole family, even picky eaters!
Main Ingredients- Generous amount of well-fermented napa cabbage kimchi (approx. 1/2 head)
- Spam (1/2 can)
- Tofu (1/3 block)
- Rice water (2300ml)

Cooking Instructions
Step 1
To start, finely chop the well-fermented napa cabbage kimchi with scissors, as it’s a key ingredient for the stew’s flavor. Place a generous amount of the chopped kimchi (about half a head’s worth) into a pot.
Step 2
Add 2 tablespoons of perilla oil, 2 tablespoons of sugar, and 1.5 tablespoons of minced garlic to the pot with the kimchi. Sauté over medium-low heat for about 7-8 minutes, until the kimchi becomes translucent and tender. Adding 1 tablespoon of cooking oil during this step will enhance the kimchi’s flavor and texture. Once the kimchi is well-sautéed, pour in 2300ml of rice water and bring to a boil over high heat.
Step 3
Once the rice water begins to boil vigorously, add the Spam and tofu, which have been sliced into bite-sized pieces (about 1-1.5 cm thick). Initially, let it boil over high heat. Once it returns to a boil, reduce the heat to medium and simmer for about 5 minutes. Then, lower the heat to low and let it simmer gently for another 10 minutes, allowing the flavors to meld beautifully.
Step 4
Serve the hot kimchi stew over a bowl of steamed rice for a truly delicious meal! The tender tofu, salty Spam, and spicy kimchi broth create a perfect harmony that will make you want to finish your entire bowl. Even the kids in my household loved it!
