Main Ingredients

  • 2-3 leaves ripe kimchi (approx. 100g), chopped
  • 200g pork shoulder or belly, cut into bite-sized pieces
  • 2 servings spaghetti (approx. 180-200g)
  • 1 onion, thinly sliced
  • 1 king oyster mushroom, thinly sliced
  • 50ml broth (vegetable or chicken) or water

Cooking Instructions

Step 1

First, heat a generous amount of olive oil in a deep pan or wok over medium-low heat. Add the sliced onion and sauté until it becomes translucent. This caramelization process will add a natural sweetness to the dish.

Step 1

Step 2

Once the onions are softened, add the chopped kimchi and the pork pieces to the pan. Increase the heat to medium-high and stir-fry until the pork is cooked through and the kimchi’s raw aroma has subsided. Pour in the 50ml of broth (or water) and continue to cook, allowing the liquid to reduce and coat the ingredients. This helps the flavors meld beautifully. (Optional: At this stage, you can add minced garlic and gochugaru for an extra spicy kick.)

Step 2

Step 3

When the pork is fully cooked, add the sliced king oyster mushrooms to the pan. Stir-fry with the other ingredients until the mushrooms soften and release their moisture. Their chewy texture will add a delightful contrast to the pasta.

Step 3

Step 4

Meanwhile, in a separate pot, bring a large amount of water to a rolling boil. Add a pinch of salt and cook the spaghetti according to the package directions, but aim for 1-2 minutes less than the recommended time for perfectly al dente pasta. Reserve about 1 cup of the starchy pasta water before draining.

Step 4

Step 5

Add the drained spaghetti directly to the pan with the kimchi pork sauce. Toss everything together over medium-high heat, ensuring the pasta is well coated. To achieve a luscious sauce consistency, gradually add some of the reserved pasta water, a ladleful at a time, while stirring vigorously. This emulsifies the sauce, making it cling beautifully to the pasta.

Step 5

Step 6

Finally, taste the pasta and adjust the seasoning with salt if needed. Finish with a generous grinding of coarse black pepper for an aromatic finish. For an extra touch, you can add a drizzle of sesame oil and a sprinkle of toasted sesame seeds. Enjoy your delicious and invigorating Kimchi Pork Pasta!
