Main Ingredients- Well-fermented Kimchi 1 bowl (approx. 200g)
- Tofu 1/2 block (approx. 150g)
- Green Onion 1 stalk
- Onion 1/2
- Zucchini 1/3
- Oyster Mushrooms 1 handful (approx. 50g)
- Shiitake Mushrooms 2 caps
- Enoki Mushrooms 1 pack (approx. 100g)
- Dumplings (Mandu) 7-10 pieces (adjust to your liking)
Cooking Instructions
Step 1
First, prepare the vegetables for the hot pot. Slice the green onion diagonally, thinly slice the onion, and cut the zucchini into half-moon shapes. Trim the base of the oyster mushrooms and separate them into strands. Remove the stems from the shiitake mushrooms and slice the caps. For the enoki mushrooms, trim the base, rinse lightly under running water, and separate the strands.
Step 2
Cut the half block of tofu into bite-sized pieces, about 2-3 cm cubes. Preparing them this way will help them maintain their shape and prevent crumbling when added to the pot.
Step 3
Take about 1 bowl of well-fermented kimchi and place it directly into the hot pot. If the kimchi pieces are too long, cut them into 2-3 manageable bites. Layering the kimchi at the bottom of the pot will deepen the broth’s flavor.
Step 4
Now it’s time to add the broth. Pour 3-4 cups (using a paper cup as a measure) of anchovy-kelp broth or store-bought bonito broth into the pot. If your kimchi is particularly sour, adding a ladleful of kimchi juice will make the broth even spicier and more flavorful.
Step 5
Once the broth is added, bring the pot to a simmer over medium-low heat. Let it simmer for about 5 minutes to allow the kimchi to soften and the flavors to meld.
Step 6
As the broth begins to boil, add the seasonings. Stir in 1 tsp of sugar to balance the sourness of the kimchi, and 1 Tbsp of gochugaru for a pleasant spiciness. Next, arrange the prepared vegetables: the sliced onion, half-moon zucchini, oyster mushrooms, shiitake mushrooms, tofu cubes, and then the dumplings (mandu). Finally, top with the enoki mushrooms.
Step 7
After adding all the ingredients, periodically ladle the simmering broth over the top to ensure all the ingredients cook evenly. Continue to simmer for another 10-15 minutes. About 2-3 minutes before turning off the heat, generously add the diagonally sliced green onions. The aromatic fragrance of the green onions will infuse the hot pot, making it even more delicious.
