Core Ingredients

  • Somyeon noodles 100g
  • Well-fermented Napa cabbage kimchi 1 cup (approx. 135g)

Cooking Instructions

Step 1

First, let’s prepare the special sauce that will make your Kimchi Bibim Guksu truly shine. For a deeper flavor, it’s best to make this sauce ahead of time and let it rest. In a bowl, combine 1 Tbsp Gochugaru, 1 Tbsp Maesil Cheong, 1 Tbsp soy sauce, 1/2 Tbsp lemon juice, 1/2 Tbsp Oligodang, 1 Tbsp Gochujang, and 2 Tbsp of sesame oil (or perilla oil for a distinct nutty flavor). Mix everything thoroughly with a spoon until well combined.

Step 1

Step 2

With the sauce ready, it’s time to cook the somyeon noodles. Bring a large pot of water to a rolling boil. Add 100g of somyeon noodles and stir them immediately with chopsticks to prevent sticking. Once the water returns to a boil, pour in about 2-3 tablespoons of cold water. Repeat this process 2-3 times to give the noodles a wonderfully chewy texture. Cook for about 4 minutes. After cooking, drain the noodles and rinse them thoroughly under cold running water. This step is crucial for removing any excess starch and the ‘floury’ taste, ensuring a perfectly chewy noodle.

Step 2

Step 3

Drain the noodles well after rinsing. Prepare the kimchi by chopping it into bite-sized pieces (about 1 cm wide) using scissors. Add 1 cup (approximately 135g) of the well-fermented Napa cabbage kimchi to the bowl with the prepared sauce. Gently mix the kimchi with the sauce using your hands, ensuring every piece is coated evenly. This step helps the kimchi absorb the sauce’s flavors before being tossed with the noodles.

Step 3

Step 4

Now it’s time to bring everything together. Place the drained somyeon noodles on top of the sauced kimchi. Gently toss and mix the noodles and kimchi together until everything is beautifully coated with the delicious sauce. Your mouth-watering Kimchi Bibim Guksu, boasting a perfect balance of tangy, sweet, and savory flavors with a delightful crunch from the kimchi, is now ready to be enjoyed!
