Ingredients- Assorted fish cakes, a good amount (cut into bite-sized pieces)
- Udon noodles, 1 pack (e.g., Sanuki udon, or your preference)
- Kimchi, 2-3 leaves (finely chopped, well-fermented kimchi recommended)
- Dashi broth pack, 1 (or 500ml anchovy-kelp broth)
- Fish sauce, 1 Tbsp (adjust to taste)
- Minced garlic, 1/2 Tbsp
- Green onions, a good amount (sliced diagonally)
Cooking Instructions
Step 1
First, cut the assorted fish cakes into bite-sized pieces. Briefly blanch them in hot water to remove any impurities and enhance their chewy texture. For the udon noodles, rinse them quickly in boiling water as well. This step helps prevent the noodles from sticking together and makes them delightfully springy.
Step 2
Bring 500ml of water to a boil with the dashi broth pack. Once boiling, add the finely chopped kimchi and let it simmer to release its refreshing flavor into the broth.
Step 3
As the broth returns to a boil, add the prepared fish cakes and let them simmer for a while. It’s important to let the fish cakes absorb the flavors of the broth.
Step 4
Finally, add the udon noodles and the diagonally sliced green onions to the pot and cook together. Adding green onions will infuse the broth with a subtle sweetness and added depth of flavor, making it even more delicious.
Step 5
Continue to cook for about 2 minutes, or until the udon noodles are fully cooked. Be careful not to overcook the noodles as they can become mushy. Your Kimchi Fish Cake Udon Hot Pot is now ready!
Step 6
Here is your delicious Kimchi Fish Cake Udon Hot Pot, boasting a spicy and refreshing broth with wonderfully chewy fish cakes and springy udon noodles. Enjoy this hearty hot pot, perhaps with a glass of soju, and chase away the cold!
