  • 8 anchovies (for broth)
  • 2 pieces of dried kelp (for broth)
  • 1 sheet of fish cake
  • 1/2 hard-boiled egg (for garnish)
  • 2 Tbsp soy sauce for soup (for broth seasoning)
  • 1 Tbsp minced garlic (for broth)

Spicy Paste Seasoning

  • 2 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp soy sauce
  • 1 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp sugar
  • 1 Tbsp plum extract (maesilcheong)
  • 1 Tbsp sesame oil
  • 1 tsp minced garlic
  • A pinch of toasted sesame seeds

Cooking Instructions

Prepare the deep and refreshing broth for your jjol-udon. While you can use store-bought broth or natural seasonings, if you’re making your own anchovy broth, boil 1,500ml of water with 8 anchovies and 2 pieces of kelp for about 10 minutes. Remember to remove the kelp once the water starts boiling to prevent any bitterness.

Once the anchovy broth is ready, add 2 Tbsp of soy sauce for soup and 1 Tbsp of minced garlic. Adjust the seasoning with salt to your preference, adding it gradually to achieve the perfect taste. This creates a delicious, well-seasoned broth.

Cut 1 sheet of fish cake into bite-sized pieces. This will add a lovely texture to your jjol-udon. Aim for pieces that are easy to eat, suitable for both children and adults.
