Main Ingredients

  • Appropriate amount of leftover jeon from the holidays (various types recommended)
  • 1/4 head of ripe kimchi
  • 600ml anchovy broth (or substitute with rice water or plain water)
  • 1 red chili pepper
  • A bit of green onion

Seasoning

  • 1 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp soy sauce

Cooking Instructions

Step 1

First, finely chop the ripe kimchi into bite-sized pieces (about 1-2 cm wide) and spread it at the bottom center of your pot. Then, artfully arrange the leftover jeon pieces around the kimchi.

Step 1

Step 2

Pour 600ml of the prepared anchovy broth into the pot. Using anchovy broth will add a deeper, richer flavor, but if you don’t have it, rice water or plain water will also work well.

Step 2

Step 3

In a small bowl, combine the seasoning ingredients: 1 Tbsp gochujang, 1 Tbsp gochugaru, and 1 Tbsp soy sauce. Mix them thoroughly. Preparing the seasoning mix in advance makes it easier to season the stew as it cooks.

Step 3

Step 4

Bring the broth to a boil, then add the pre-mixed seasoning. Stir well to combine. Once it starts to bubble vigorously, reduce the heat to medium-low and let it simmer for a while, allowing the kimchi and jeon to soften and the flavors to meld. Taste and adjust the seasoning with more soy sauce or salt if needed.

Step 4

Step 5

Once the stew has simmered and the flavors have deepened, add the sliced red chili pepper and chopped green onion to the center of the pot. Simmer for another minute or two until the aromas of the vegetables are released. Your jeon stew is ready!

Step 5

Step 6

Here’s your ‘Jeon Stew’, a delicious transformation of holiday jeon, ready to be enjoyed!

Step 6

Step 7

Taking a spoonful, the spicy kick from the kimchi blends perfectly with the rich flavor extracted from the jeon, making it incredibly delicious! The inherent savoriness of the jeon provides a deep broth flavor without needing extra seasonings. If you’re looking for a creative way to use up leftover holiday jeon, try making this hearty and spicy jeon stew. It’s a guaranteed rice-lover’s dish! ^.^
