My Own Recipe for Spicy Japchae with Fresh Green Peppers! Simple Yet Delicious
A fantastic spicy japchae featuring the crispness of green peppers and a flavorful, spicy sauce.
Main Ingredients- 1 handful of japchae-style meat (approx. 100g, beef or pork)
- 4 green peppers (add 1-2 Korean chili peppers for extra heat if desired)
- 1/2 medium onion
- 1 serving of glass noodles (dangmyeon, approx. 80-100g)
Cooking Instructions
Step 1
First, prepare the green peppers by removing the stems and washing them thoroughly. Cut them in half lengthwise, remove the seeds, and then julienne them into strips about 0.5cm wide. Slice the onion similarly. This uniform cutting ensures even cooking and a beautiful presentation.
Step 2
Boil the glass noodles (dangmyeon) in water according to the package instructions, or until tender. Once cooked, drain them and rinse under cold water to prevent sticking. Cut the noodles into manageable lengths for easier mixing. (Tip: Adding a piece of kelp while boiling noodles enhances their flavor, and a little olive oil can prevent them from becoming mushy or clumping.)
Step 3
Heat a large pan or wok over high heat. Add 1-2 Tbsp of cooking oil, then add the japchae-style meat and stir-fry until it’s no longer pink. Once the meat is partially cooked, add the julienned onions and continue to stir-fry until the onions become translucent. Sautéing the onions first helps release their sweetness, enhancing the overall dish.
Step 4
When the meat and onions are sufficiently cooked, add the julienned green peppers and stir-fry briefly until they just begin to soften. (Tip: Green peppers lose their crispness if overcooked, so add them near the end to maintain their satisfying crunch.) Now, add all the sauce ingredients: oyster sauce, doubanjiang, chili oil, and any optional ingredients like soy sauce, sugar, and minced garlic. Stir well to coat all the ingredients evenly. Finally, add the cooked glass noodles and stir-fry for about 1 more minute, allowing all the flavors to meld together. Your delicious spicy japchae is now ready to be served! It’s best enjoyed immediately while hot.
