  • Occasion : Everyday
  • Cooking : Stir-fry
  • Servings : 5 servings
  • Cooking Time : Within 30 minutes
  • Difficulty : Anyone

Main Ingredients

  • 1 bag of Korean green peppers (about 200g)
  • 200g dried anchovies

Seasoning & Others

  • 2 Tbsp soy sauce
  • 1 Tbsp cooking syrup (or corn syrup/rice syrup)
  • 1 tsp sesame seeds
  • 5 Tbsp cooking oil
  • 1 tsp minced garlic

Cooking Instructions

Step 1

First, wash the Korean green peppers thoroughly under running water and pat them dry. Remove the stems, and if the peppers are thick, cut them in half or into thirds to make them bite-sized. Cutting them too small might cause them to break apart during stir-frying, so aim for a moderate size.

Step 1

Step 2

For the anchovies, remove any hard parts or fins. Heat a dry pan over medium-low heat and toast the anchovies until they become fragrant and slightly crispy. This process removes any fishy smell and enhances their nutty flavor.

Step 2

Step 3

Once toasted, place the anchovies in a sieve and shake well to remove any crumbs or dust. This step ensures a cleaner stir-fry and prevents small bits from burning.

Step 3

Step 4

In a wide pan or wok, heat 3 tablespoons of cooking oil over low heat. Add the minced garlic and sauté gently until fragrant. Be careful not to burn the garlic; slow sautéing will infuse the oil with a wonderful garlic aroma.

Step 4

Step 5

Once the garlic is fragrant, add the prepared anchovies to the pan and stir-fry together for about 1-2 minutes, allowing the anchovies to absorb the garlic-infused oil.

Step 5

Step 6

Now, add the cut green peppers to the pan and stir-fry them with the anchovies. Continue to cook until the peppers soften slightly.

Step 6

Step 7

If the anchovies seem too dry or start to stick during stir-frying, add the remaining 2 tablespoons of cooking oil around the edges of the pan while continuing to stir. This helps keep everything moist and prevents burning, resulting in a delicious stir-fry.

Step 7

Step 8

Add the soy sauce (2 Tbsp) and cooking syrup (1 Tbsp). Mix everything well to ensure the seasoning coats all the ingredients evenly. Stir-fry until the green peppers are glossy and have absorbed the flavors.

Step 8

Step 9

Continue to stir-fry over medium-low heat. You’ll know it’s almost done when the green peppers are tender and a delicious aroma fills the air. Avoid overcooking to maintain a pleasant texture for the peppers.

Step 9

Step 10

Finally, sprinkle with 1 teaspoon of sesame seeds for an extra nutty flavor. Your delicious Green Pepper and Anchovy Stir-Fry is now complete! Enjoy it served over a bowl of hot rice – it’s a true rice-lover’s delight!
