One of our most frequently made dishes at home is Gochujang Tofu Stew. It’s especially delicious when made with homemade gochujang, resulting in a spicy and flavorful stew. This recipe brings together the savory notes of pork, the tender texture of tofu, and a wonderfully spicy broth that’s perfect with a bowl of rice. Enjoy this simple yet hearty meal!

- 1/2 stalk Green onion

Let me introduce you to the ‘Spicy Gochujang Tofu Stew’. This dish is a household favorite, especially when made with homemade gochujang, which imparts a deeper, more authentic flavor. Its spicy and refreshing taste is incredibly addictive and pairs perfectly with rice.

Cut the tofu into bite-sized pieces, about 2-3 cm thick cubes. Cutting them larger helps prevent them from falling apart during cooking, maintaining a pleasant texture. Be careful not to cut them too small.

Heat 2 tablespoons of sesame oil in a pot over medium heat. Add the sliced pork neck and stir-fry until it starts to brown. Then, add 3 tablespoons of gochujang and continue to stir-fry over low heat for 1-2 minutes, ensuring the gochujang doesn’t burn. Pre-sautéing the gochujang enhances its savory depth.

Once the pork and gochujang are well combined and sautéed, pour in about 3-4 cups of rice water (or plain water) to create a broth. Bring to a boil over high heat, then add 1 tablespoon of gochugaru and 1 tablespoon of minced garlic. Gently add the prepared tofu. Once the stew comes to a rolling boil again, reduce the heat to medium-low and simmer for another 5-7 minutes to allow the flavors to meld.
