I made this Gochujang Tofu Stew because I was craving its spicy and rich broth. The harmony of deep flavor and abundant ingredients makes it the perfect dish to finish a bowl of rice. Don’t hesitate to make it anytime you’re longing for a delicious home-cooked meal, not just on special occasions!
Main Ingredients- 200g Pork Neck (cut into bite-sized pieces)
- 2 packs Tofu (firm or stewing type recommended)
- Generous amount of Green Onion (chopped)
- 1 Tbsp Minced Garlic
- 2 Tbsp Gochujang (Korean chili paste)
- Small bunch of Chives (for garnish, optional)

Step 1
Introducing Gochujang Tofu Stew, a dish that tastes incredible with a warm bowl of rice! This stew is loved for its spicy and refreshing broth.
Step 2
Prepare 200g of pork neck. It’s best to cut it into thick pieces, about 1.5cm thick, so you get a satisfying bite in the stew.
Step 3
Heat 1-2 tablespoons of perilla oil in a pot over medium heat. Add the sliced pork neck and stir-fry until the surface turns golden brown. Then, add 2 tablespoons of gochujang and continue to stir-fry, ensuring the paste coats the meat well. Be careful not to burn the gochujang.
Step 4
Next, pour in rice water until it just covers the meat. Rice water adds a wonderful depth and savory flavor to the broth. Stir in 1 tablespoon of minced garlic and bring to a boil over high heat.
Step 5
Once the stew starts to bubble, add the tofu cut into large pieces. To prevent the tofu from breaking apart, try not to stir too much after adding it.
Step 6
If you prefer a spicier and more robust flavor, feel free to add 1-2 tablespoons of red pepper flakes (gochugaru). Adjust the amount according to your preference.
Step 7
After the tofu has softened slightly, reduce the heat to low and let it simmer gently for about 10 minutes. This allows all the ingredients to meld together, creating a richer flavor. Finally, top generously with chopped green onions. Your delicious Gochujang Tofu Stew is complete! You can also add chives as a garnish if desired.
