  • Occasion : Everyday
  • Cooking : Boil / Simmer
  • Servings : 4 servings
  • Cooking Time : Within 30 minutes
  • Difficulty : Anyone

Main Ingredients

  • 1 Potato (cubed)
  • 1/2 Zucchini (thinly sliced into half-moons)
  • 230g Pork (stew meat, cut into bite-sized pieces)
  • 1 Green Onion (sliced diagonally)
  • 1/2 Onion (roughly chopped)

Cooking Instructions

Step 1

First, prepare the vegetables. Slice the zucchini into thin half-moons, about 0.5 cm thick. Cut the potato into cubes, roughly 1.5 cm in size. Avoid cutting the potatoes too large, as they will take longer to cook.

Step 1

Step 2

Chop the onion into larger pieces, about 1.5 cm, to add sweetness and texture. Slice the green onion diagonally at about 1 cm thickness; this helps infuse the broth with its fresh flavor.

Step 2

Step 3

Now, let’s stir-fry the ingredients to develop a deep flavor. Heat 1 Tbsp of sesame oil in a pot or pan over medium heat. Add the pork and stir-fry until it’s no longer pink and is cooked through. Sautéing the pork first renders its fat, which helps the vegetables and seasonings meld together beautifully.

Step 3

Step 4

Once the pork is partially cooked, add 1.5 Tbsp of gochugaru, 1.5 Tbsp of gochujang, and 2/3 Tbsp of doenjang. Stir-fry over low heat for about 1 minute, being careful not to burn the pastes. This step toasts the gochujang and doenjang, intensifying their savory and aromatic qualities.

Step 4

Step 5

Pour in 500ml of water. Bring the stew to a boil over high heat. Once boiling, add the prepared potatoes, onions, and zucchini. Once the stew returns to a boil, reduce the heat to medium-low and simmer for about 10 minutes, or until the potatoes are tender. The vegetables will release their natural sweetness and umami into the broth.

Step 5

Step 6

This is the final step. When the potatoes are nearly cooked, add 1 Tbsp of minced garlic and the sliced green onions. Simmer for another minute to allow the fresh flavor of the green onions to infuse the stew. Your delicious Gochujang Stew is ready! Enjoy it hot to banish that holiday food fatigue!
