Ingredients- 6 small red chili flakes (peperoncino)
- 0.4 Tbsp paprika powder
- 2 servings pasta
- 1/2 onion
- 7 strips thick-cut bacon
- 1 Tbsp butter (approx. 15g)
- Pinch of salt
- Pinch of black pepper
- 6 cloves garlic
- 1 Tbsp minced garlic (approx. 15g)
- 1 slice cheddar cheese
- 200ml heavy cream
- 1.5 Tbsp grated Parmesan cheese (approx. 15g)
- 1 Tbsp Gochujang (Korean chili paste, approx. 15g)
- 2 Tbsp mozzarella cheese (approx. 20g, optional)
- 0.4 Tbsp sugar (approx. 5g, optional)
Cooking Instructions
Step 1
First, thinly slice half an onion. For the red chili flakes (peperoncino), you can adjust the amount based on your spice preference; crush or mince about 6 flakes to add a spicy aroma.
Step 2
Cut the thick-cut bacon into bite-sized pieces. Place the bacon in a pan over medium heat and cook until golden brown and crispy. Set aside about 2 tablespoons of the cooked bacon for garnish later. (This step is optional but greatly enhances the flavor).
Step 3
In the same pan used for the bacon, melt 1 tablespoon of butter. Adding butter will enrich the pasta with a more savory flavor.
Step 4
Add 6 cloves of thinly sliced garlic (in slivers) and 1 tablespoon of minced garlic to the pan to infuse their aroma. Once the garlic fragrance is strong, add the crushed red chili flakes and sauté to bring out the spicy notes.

Add the sliced onions to the pan. Season with about 3 pinches of salt and a sprinkle of black pepper, then sauté until the onions become translucent. Well-cooked onions add sweetness and deepen the sauce’s flavor.

Now, pour in 200ml of heavy cream for a smooth texture. Reduce the heat to medium-low to gently simmer the cream, being careful not to let it boil over.

For a rich cheesy flavor, stir in 1.5 tablespoons of grated Parmesan cheese until it’s fully melted. The cheese will make the sauce richer and smoother.

Add 1 slice of cheddar cheese and stir until completely melted. Cheddar cheese adds a creamy color and depth of flavor to the sauce.

Add 1 tablespoon of Gochujang to introduce a Korean-style spiciness. Stir well until the Gochujang is completely dissolved into the sauce, enhancing its umami.

Add 0.4 tablespoons of paprika powder for color and a subtle spicy kick. You can omit this step if you prefer less heat.

Cook 2 servings of pasta in boiling salted water until about 1 minute shy of al dente (usually 8 minutes). Reserve some pasta water, then immediately add the drained pasta to the sauce in the pan. Stir well, mixing with the pasta water, and cook for another 1-2 minutes until the sauce thickens and coats the pasta nicely. If the sauce becomes too thick, gradually add a little reserved pasta water to reach your desired consistency.
Step 12
For an extra cheesy finish, stir in 2 tablespoons of mozzarella cheese until melted. This is optional, but it adds a wonderfully decadent texture and flavor.
Step 13
At this point, you already have a delicious, spicy, and cheesy pasta. If you’d like a hint of sweetness at the end of the spicy kick, add 0.4 tablespoons of sugar to gently balance the heat. (Optional).
