Deliciously Spicy Korean Pork Bulgogi with Gochujang
Prepare this flavorful Jeyuk Bokkeum in advance and freeze it for quick and easy meals anytime you crave a delicious, home-cooked Korean dish. It’s perfect for busy days and makes for an incredibly satisfying meal!
Main Ingredients- Pork shoulder (thinly sliced) – approx. 1kg (2.2 lbs)
- Onions – 2 medium (thinly sliced)
- Carrot – 1/2 medium (thinly sliced or julienned)
- King oyster mushrooms – 2 (bite-sized pieces)
- Green onion – 1 stalk (cut diagonally)
- Red chili pepper – 2 (cut diagonally, seeds removed)
- Cheongyang chili pepper (or other hot chili) – 3 (cut diagonally, seeds removed)
- Garlic – 10 cloves (thinly sliced or minced)
Spicy Marinade- Gochujang (Korean chili paste) – 4 Tbsp
- Soy sauce – 2 Tbsp
- Ginger powder – 2 tsp (or 1 tsp minced fresh ginger)
- Plum extract (or corn syrup/oligosaccharide) – 2 Tbsp
- Sesame oil – 2 Tbsp
- Minced garlic – 2 Tbsp
- Gochugaru (Korean chili flakes) – 2 Tbsp
- Gochujang (Korean chili paste) – 4 Tbsp
- Soy sauce – 2 Tbsp
- Ginger powder – 2 tsp (or 1 tsp minced fresh ginger)
- Plum extract (or corn syrup/oligosaccharide) – 2 Tbsp
- Sesame oil – 2 Tbsp
- Minced garlic – 2 Tbsp
- Gochugaru (Korean chili flakes) – 2 Tbsp
Cooking Instructions
Step 1
Start by preparing the pork shoulder, the star ingredient of Jeyuk Bokkeum. Gently pat the meat dry with paper towels after rinsing to help reduce any gamey odor.
Step 2
Prepare all your vegetables: thinly slice the onions, carrots, and mushrooms. Cut the green onion and chili peppers diagonally. Mince or slice the garlic. In a separate bowl, combine all the marinade ingredients: gochujang, soy sauce, ginger powder, plum extract, sesame oil, minced garlic, and gochugaru. Whisk well to create a smooth, flavorful sauce. You can add a touch of sugar if you prefer a sweeter profile.
Step 3
In a large mixing bowl, add the prepared pork. Pour the prepared gochujang marinade over the pork. Using your hands, gently massage the marinade into the meat, ensuring every piece is well-coated. Let it marinate for about 10 minutes to allow the flavors to meld.
Step 4
For make-ahead convenience, divide the marinated pork and chopped vegetables (onions, carrots, mushrooms) into individual meal portions using freezer-safe bags or containers. This makes defrosting and cooking a breeze later. For best results, press out as much air as possible before sealing. Freeze for later use. (If refrigerating, consume within 2-3 days).
Step 5
Heat a skillet or pot over medium heat. Add the marinated pork and vegetables. Stir-fry for about 5-7 minutes, or until the pork is fully cooked through and the vegetables are tender. Keep an eye on the heat to prevent the marinade from burning.
Step 6
Serve the delicious Jeyuk Bokkeum hot, sprinkled with toasted sesame seeds. It’s wonderful served over rice, and pairs perfectly with lettuce wraps or pickled radish wraps!
