  • Oligosaccharide 1 Tbsp
  • Minced Garlic 1 Tbsp

First, let’s prepare the key to delicious Gochujang Pork Belly: the marinade. In a bowl, combine 2 generous tablespoons of Gochujang, 1 tablespoon of fine Korean red pepper flakes, 1 tablespoon of sugar, 1 tablespoon of soy sauce, 3 tablespoons of mirin or rice wine, 1 tablespoon of oligosaccharide, and 1 tablespoon of minced garlic. Mix them thoroughly with a spoon until you have a smooth, well-combined sauce. Ensuring all ingredients are evenly incorporated is crucial for the best flavor.

Now, coat the pork belly evenly with the prepared marinade. It’s best to place the pork belly and the marinade in a large bowl and gently massage the marinade into the meat with your hands, much like you would for Jeyuk Bokkeum (spicy stir-fried pork).
