Today, I’m sharing a recipe for Gochujang Pork Belly, which takes delicious pork belly to another level with a savory and slightly sweet marinade. The key to its incredible flavor is marinating for at least 3 hours, so please keep this in mind before you start cooking! This recipe guarantees a delightful pork belly experience at home.
Main Ingredients- Pork Belly 500g
Spicy & Sweet Marinade- Gochujang (generous) 2 Tbsp
- Korean Red Pepper Flakes (fine) 1 Tbsp
- Sugar 1 Tbsp
- Soy Sauce 1 Tbsp
- Mirin or Rice Wine 3 Tbsp
- Oligosaccharide 1 Tbsp
- Minced Garlic 1 Tbsp
- Gochujang (generous) 2 Tbsp
- Korean Red Pepper Flakes (fine) 1 Tbsp
- Sugar 1 Tbsp
- Soy Sauce 1 Tbsp
- Mirin or Rice Wine 3 Tbsp

Step 1
First, let’s prepare the key to delicious Gochujang Pork Belly: the marinade. In a bowl, combine 2 generous tablespoons of Gochujang, 1 tablespoon of fine Korean red pepper flakes, 1 tablespoon of sugar, 1 tablespoon of soy sauce, 3 tablespoons of mirin or rice wine, 1 tablespoon of oligosaccharide, and 1 tablespoon of minced garlic. Mix them thoroughly with a spoon until you have a smooth, well-combined sauce. Ensuring all ingredients are evenly incorporated is crucial for the best flavor.
Step 2
Now, coat the pork belly evenly with the prepared marinade. It’s best to place the pork belly and the marinade in a large bowl and gently massage the marinade into the meat with your hands, much like you would for Jeyuk Bokkeum (spicy stir-fried pork). This ensures the flavors penetrate deeply. You can also use disposable gloves or a spoon for mixing.

Cover the marinated pork belly with plastic wrap or place it in an airtight container and refrigerate it to marinate. This marinating step is vital for developing the flavor. I marinated mine overnight for maximum effect. It’s essential to let it marinate for at least 3 hours so the bold flavors of the Gochujang mixture truly infuse into the meat. If you have the time, overnight marination is highly recommended!
