Spicy Gochujang Pork Belly
Recreating the ‘Go-chujang Pork Belly’ from ‘House on Wheels’
Inspired by a delicious-looking Gochujang Pork Belly recipe featured on the popular TV show ‘House on Wheels,’ I decided to recreate it at home! While I used store-bought gochujang, the resulting dish was incredibly flavorful and satisfying. Perfect for a special meal or a comforting dinner, this recipe is easy to follow and delivers a wonderfully spicy and sweet pork belly that’s sure to be a hit.
Ingredients- 600g Fresh Refrigerated Pork Belly
- 3 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Minced Garlic
- 3 Tbsp Maesil Cheong (Plum Syrup/Extract)
- 1 handful Scallion (julienned)
- 6 Tbsp Olive Oil
Cooking Instructions
Step 1
Begin with 600g of fresh, refrigerated pork belly, which will serve approximately 2-3 people. Gently rinse the pork belly under cool running water. Place the pork belly in a bowl and generously coat it with 3 tablespoons of Maesil Cheong. For added flavor, lightly season with a pinch of salt and pepper. Let the pork belly marinate and tenderize.
Step 2
While the pork belly is marinating, prepare the flavorful sauce. In a separate bowl, combine 3 tablespoons of minced garlic, a handful of thinly julienned scallions (using scallion threads adds a nice texture), and 3 tablespoons of gochujang. Mix these ingredients thoroughly until well combined, ensuring a smooth paste.
Step 3
Now, pour the prepared gochujang mixture over the marinated pork belly. Ensure that each piece of pork belly is evenly coated with the sauce. Allow the pork belly to marinate for about 30 minutes in the refrigerator. This resting period allows the flavors to deeply penetrate the meat, enhancing its taste.
Step 4
Heat a skillet over medium-low heat and add 3 tablespoons of olive oil. Once the oil is shimmering, add half of the marinated pork belly (about 300g) to the pan. Be cautious as the pork belly may splatter oil. Cover the pan and stir occasionally to ensure even cooking. Cook the remaining 300g of pork belly in batches, adding another 3 tablespoons of olive oil for each batch.
Step 5
You’ll notice that the pork belly releases quite a bit of oil as it cooks. It’s important to manage the heat by keeping it at a medium temperature. Stir and cook gently to prevent burning and ensure the pork belly becomes beautifully browned and tender.
Step 6
Once the pork belly is cooked to a delightful crisp on the outside and is juicy on the inside, it’s ready to be enjoyed! Serve hot with steamed rice, wrap it in fresh lettuce leaves with your favorite accompaniments, or enjoy it as is.
