How to Make Spicy Gochujang Minced Meat Rice Balls
Craving something spicy? These rice balls are made with minced meat stir-fried in a gochujang sauce and then pan-fried in butter until golden brown. They offer a delightful balance of spicy, savory, and slightly sweet flavors, making them a perfect meal or snack.
Rice Ball Filling- 100g minced meat
- 1 Tbsp red pepper flakes (gochugaru)
- 1 Tbsp soy sauce
- 1 Tbsp fish sauce (or tuna extract)
- 1 Tbsp mirin (rice wine)
- 1 Tbsp minced garlic
- 1 Tbsp sesame oil
- 1 Tbsp sesame seeds
- 1 Tbsp chopped green onion
- 1 Tbsp butter
Cooking Instructions
Step 1
Let’s start by preparing the delicious filling for our rice balls. In a small bowl, add 1 Tbsp of red pepper flakes (gochugaru).

Next, add 1 Tbsp of gochujang (Korean red chili paste) for a deep, rich flavor.
Step 3
Add 1 Tbsp of soy sauce to balance the flavors and enhance the savoriness.
Step 4
Pour in 1 Tbsp of fish sauce or tuna extract for an added layer of umami. (If you don’t have it, you can substitute with dark soy sauce).
Step 5
Add 1 Tbsp of minced garlic for a fragrant kick. The pungency of the garlic will meld beautifully with the sauce.
Step 6
Using a spoon or spatula, mix all the prepared sauce ingredients thoroughly until well combined. Set this flavorful sauce aside for later.
Step 7
Now, heat a frying pan over medium-low heat and add a little cooking oil. Add 1 Tbsp of chopped green onions and sauté until fragrant and translucent, about 1-2 minutes. This step creates a lovely fragrant oil.
Step 8
Once the green onions are fragrant, add the 100g of minced meat to the pan. Break up any clumps with your spatula and cook until the meat is no longer pink.

When the minced meat is almost fully cooked, add the prepared spicy gochujang sauce mixture to the pan.

Stir everything together well, ensuring the sauce coats the minced meat. Continue to cook over medium heat for about 1-2 minutes until the sauce is slightly thickened and glossy. Be careful not to burn the sauce.

In a separate bowl, combine warm cooked rice with 1 Tbsp of sesame seeds and 1 Tbsp of sesame oil. Gently mix with a spatula, being careful not to mash the rice grains. Ensure the rice is evenly coated with the sesame oil and seeds for a nutty aroma.
Step 12
Take a portion of the seasoned rice and flatten it in your palm. Place a generous spoonful of the cooked minced meat filling in the center. Carefully shape the rice around the filling, forming it into a round rice ball. Avoid pressing too hard.
Step 13
Wipe the frying pan clean, or use a separate one. Melt 1 Tbsp of butter over medium-low heat. Keep the heat low to prevent the butter from burning.
Step 14
Once the butter is melted and shimmering, carefully place the formed rice balls into the pan. Pan-fry them on each side until they are golden brown and slightly crispy. Your delicious spicy gochujang minced meat rice balls are now ready to enjoy!
