Easy Hoe Deopbap Recipe with Spicy Gochujang Sauce – Great for Using Leftover Raw Fish!

Spicy Gochujang Hoe Deopbap: Fresh Fish and Vibrant Vegetables

This weekend, I brought home some fresh flatfish and yellowtail sashimi from the fish market. We love raw fish, so we always get a large portion! It’s usually enough for our family of four. However, eating just raw fish can become a bit monotonous after a while. That’s why I decided to make Hoe Deopbap the next day! Hoe Deopbap is a delightful dish where you place fresh raw fish and a generous amount of vegetables over rice, then mix it all with a spicy and sweet gochujang sauce. It’s a simple one-bowl meal, but it’s packed with balanced nutrition, making it a satisfying meal. Plus, Hoe Deopbap is relatively low in calories (around 400-500 kcal per serving), so it’s a guilt-free option for those on a diet. Of course, the calorie count can vary depending on the ingredients used, so it’s wise to choose your vegetables carefully. I used whatever vegetables I had at home: lettuce, carrots, and cucumber, all thinly sliced. I also finely chopped the flatfish and yellowtail. Let’s get started with making this delicious Gochujang Hoe Deopbap!

Main Ingredients

  • Fresh sashimi (e.g., flatfish, yellowtail) – appropriate amount
  • Lettuce leaves: 4-5
  • Perilla leaves: 10
  • Cucumber: 1/4
  • Carrot: 1/4
  • Onion: 1/4
  • Warm cooked rice: 2/3 bowl

Cooking Instructions

Step 1

First, let’s make the star of the Hoe Deopbap: the spicy gochujang sauce! In a bowl, combine 2 tablespoons of gochujang, 1 tablespoon of gochugaru, 1 tablespoon of sugar, 3 tablespoons of vinegar, 1 tablespoon of soy sauce, 1 tablespoon of plum extract, 0.5 tablespoon of minced garlic, and 0.5 tablespoon of mustard paste. If you like, add a tiny pinch of ginger powder for an extra layer of flavor.

Step 1

Step 2

Instead of using the sauce immediately, it’s best to let it rest and meld for about 10-20 minutes in the refrigerator. This allows the flavors to deepen and become more harmonious, resulting in a richer, more delicious sauce. This pre-making and resting step is key to a fantastic Hoe Deopbap sauce.

Step 2

Step 3

Finely slice the fresh flatfish or yellowtail sashimi into bite-sized pieces. Make sure the slices aren’t too thick, so they blend well with the rice when mixed.

Step 3

Step 4

Wash all the vegetables thoroughly. Cut the lettuce and perilla leaves into appropriate sizes. Peel and thinly julienne the cucumber, carrot, and onion. Fresh and crisp vegetables are essential for a delightful crunchy texture in your Hoe Deopbap.

Step 4

Step 5

Hoe Deopbap is assembled by placing rice in a bowl, topping it with the prepared vegetables and fish, and then mixing it with the sauce. The natural colors of the ingredients make it visually appealing even without elaborate plating. Personally, I believe that the more vegetables you add, the tastier it becomes! So, feel free to use a variety of vegetables from your fridge to add vibrant colors and a satisfying crunch.

Step 5

Step 6

Fill your serving bowl with about 2/3 of a portion of warm cooked rice. Generously arrange the fresh vegetables and the sliced sashimi on top of the rice. Finally, add your desired amount of the prepared spicy gochujang sauce and mix everything together to enjoy! For an extra touch of richness, you can add a few drops of sesame oil according to your preference. And just like that, a simple yet delicious bowl of Hoe Deopbap is ready!
