Main Ingredients- 500g Potatoes
- 150g Beef Chuck flap (for stew/braising)
- 1/2 Scallion stalk
- 1 tsp Sesame seeds
- 350mL Water
- 1/2 Tbsp Sesame oil
- 2 pieces Dried kelp (4x4cm)
Seasoning Sauce- 2 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Soy sauce
- 1 Tbsp Oyster sauce
- 2 Tbsp Cooking wine (Mirin)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Minced garlic
- 1 tsp Black pepper
- 2 Tbsp Water
- 2 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Soy sauce
- 1 Tbsp Oyster sauce
- 2 Tbsp Cooking wine (Mirin)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Minced garlic
- 1 tsp Black pepper
- 2 Tbsp Water
Cooking Instructions
Step 1
First, peel the potatoes and cut them into pieces about 1 to 1.5 cm thick. Place the cut potatoes in a pot and add 350mL of water, enough to cover about 80% of the potato pieces. If the cut surface area of the potato pieces is very large, you can cut them in half lengthwise before slicing them into the desired thickness for more even cooking. Otherwise, simply slice them as is. Finely chop the scallions into about 0.7cm segments for garnish and set aside.
Step 2
Now, add the dried kelp pieces and all the prepared seasoning sauce ingredients to the pot. Begin cooking over high heat. (Refer to the ‘Seasoning Sauce’ section above for the sauce ingredients!)

Once the liquid comes to a rolling boil, reduce the heat to medium. Gently stir the potatoes with a wooden spoon or silicone spatula to prevent them from breaking apart. Skim off any foam or impurities that rise to the surface. Then, cover the pot with a lid and continue to cook for about 5 minutes.
Step 4
Now, add the thinly sliced beef chuck flap to the pot and gently mix it in to distribute the seasoning evenly. Cover the pot again and cook for another 8 minutes. This allows the beef to cook and its delicious juices to meld with the potatoes.

This is the final step! Just before turning off the heat, drizzle in the fragrant sesame oil and sprinkle the chopped scallions and sesame seeds over the top for a beautiful finish.
