Spicy Gochujang Braised Potatoes
Golden Recipe for ‘Gochujang Braised Potatoes’ Made with Fresh Potatoes! It’s Pleasantly Spicy and Delicious! ^^
I’m enjoying the abundant fresh potatoes by making them in various ways. ^^
Ingredients- 2 medium potatoes
- 1 green chili pepper
- 1/2 cup anchovy broth (or water)
Seasoning Sauce- 1 Tbsp gochujang (Korean chili paste)
- 2 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp soy sauce
- 1/2 Tbsp minced garlic
- 1 Tbsp sugar
- 1 Tbsp plum extract (or corn syrup)
Finishing Touches- 1 Tbsp perilla oil
- 1 Tbsp sesame seeds
- A pinch of black pepper
- 1 Tbsp gochujang (Korean chili paste)
- 2 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp soy sauce
- 1/2 Tbsp minced garlic
- 1 Tbsp sugar
- 1 Tbsp plum extract (or corn syrup)
Finishing Touches- 1 Tbsp perilla oil
- 1 Tbsp sesame seeds
- A pinch of black pepper
Cooking Instructions
Step 1
First, let’s prepare the seasoning sauce for the spicy gochujang braised potatoes. Add 1 tablespoon of gochujang to a bowl.
Step 2
Add 2 tablespoons of gochugaru to this.
Step 3
Also add 2 tablespoons of soy sauce for a savory flavor.
Step 4
Add 1/2 tablespoon of minced garlic to enhance the aroma.
Step 5
Adjust the sweetness with 1 tablespoon of sugar.
Step 6
Finally, add 1 tablespoon of plum extract for extra depth and shine, then stir well to combine the seasonings. Let it sit for a moment.
Step 7
Now it’s time to prepare the main ingredient, the potatoes. Peel the potatoes, wash them thoroughly, and cut them into large chunks, about 2cm thick. (Cutting them to a similar size ensures even cooking!)
Step 8
Heat 1 tablespoon of grapeseed oil in a pan over medium heat. Add the cut potatoes and stir-fry for about 5 minutes until the edges are lightly golden. This step helps prevent the potatoes from breaking apart during braising and adds a nutty flavor.
Step 9
Pour 1/2 cup of anchovy broth (or rice water or plain water) over the stir-fried potatoes.
Step 10
Add all of the prepared seasoning sauce to the pan. Stir gently to coat the potatoes evenly. Cover the pan and simmer over medium heat for 10 minutes. Then, reduce the heat to low and continue to braise for another 4 minutes. This allows the sauce to reduce and the potatoes to absorb the flavors.
Step 11
Once the potatoes are almost fully braised, add the thinly sliced green chili peppers and stir briefly. The green chilies add color and a mild kick.
Step 12
Finally, drizzle 1 tablespoon of perilla oil for a fragrant finish.

Sprinkle 1 tablespoon of sesame seeds for a nutty flavor and texture.

Optionally, add a pinch of black pepper for extra flavor. Your spicy gochujang braised potatoes are now ready!
