Today, we’re making a special spicy version of the beloved anchovy stir-fry, a national banchan! This recipe is perfect for adults and will surely become a new favorite for your rice bowl. Elevate your dining table with this simple yet deeply flavorful Gochujang Anchovy Stir-Fry!
Main Ingredients- 500g stir-fry anchovies (medium size)
- 7 cloves garlic
Seasoning- 2.5 Tbsp Gochujang (Korean chili paste)
- 0.5 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp maesil-cheong (plum syrup)
- 1.5 Tbsp Mirin (or cooking wine)
- 5ml sesame oil (approx. 1 tsp)
- 1 Tbsp Oligodang (corn syrup or rice syrup)
- 2 Tbsp toasted sesame seeds
- 2.5 Tbsp Gochujang (Korean chili paste)
- 0.5 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp maesil-cheong (plum syrup)
- 1.5 Tbsp Mirin (or cooking wine)
- 5ml sesame oil (approx. 1 tsp)
- 1 Tbsp Oligodang (corn syrup or rice syrup)
- 2 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
Prepare medium-sized anchovies suitable for stir-frying. You can use them directly without removing the heads or innards.
Step 2
Spread the prepared anchovies on a wide plate. Microwave them for 2 minutes, then stir them and microwave for another 2 minutes. This helps reduce the fishy smell and makes the anchovies crispier.
Step 3
Thinly slice the garlic. Heat sesame oil in a pan over low heat and gently sauté the sliced garlic until fragrant. Be careful not to burn the garlic; cook until it turns lightly golden.
Step 4
Once the garlic is fragrant, add Gochujang, maesil-cheong, and mirin to the pan. Stir well to combine the seasonings and simmer over medium-low heat until the sauce slightly thickens.
Step 5
Turn off the heat. Carefully add the microwaved anchovies to the pan, making sure not to let any dust fall in. Gently mix the anchovies with the Gochujang sauce until evenly coated.
Step 6
Turn the heat back on to low. Add the Gochugaru (chili flakes) and stir continuously to combine with the sauce. Stir-fry until well mixed, ensuring it doesn’t burn.
Step 7
Add the Oligodang for sweetness and a glossy finish. Stir quickly (‘shake shake!’) to coat the anchovies evenly with the glaze.
Step 8
Finally, sprinkle generously with toasted sesame seeds for added nuttiness. Your delicious Spicy Gochujang Anchovy Stir-Fry is ready! Store any leftovers in an airtight container in the refrigerator.
