I was surprised when my daughter, who initially only asked for the stir-fry, started reaching for the seasoned garlic scapes more often as they became tastier! Main Ingredients

  • 1 bunch fresh garlic scapes
  • 6 pieces fried tofu (yubu), prepared
  • 3 pieces fish cakes (eomuk)

Seasoning Ingredients

  • 2 Tbsp olive oil
  • 1 Tbsp oyster sauce
  • 1 Tbsp sugar
  • 3 Tbsp soy sauce
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp fish sauce (myeolchi aekjeot)
  • 4 Tbsp honey
  • Chopped green onions, to taste
  • Toasted sesame seeds, to taste
  • Sesame oil, to taste

Cooking Instructions

Step 1

Trim the tough ends of the fresh garlic scapes. Wash them thoroughly under running water, then place them in a colander to drain excess water.

Step 2

Heat a wide pan or wok over medium heat. Add the drained garlic scapes and stir-fry them briefly. This step helps them soften slightly and allows for better oil coating in the next step.

Step 3

Once the garlic scapes are lightly coated with oil, push them to one side of the pan. Add a little more olive oil to the empty space and add all the seasoning ingredients: oyster sauce, sugar, soy sauce, gochugaru, gochujang, fish sauce, and honey. Stir-fry everything together quickly, being careful not to burn the seasonings. (Tip: If you are adding fried tofu and fish cakes, this is the stage to add them and stir-fry together.)

Step 4

For the seasoned garlic scapes, bring a pot of water to a boil. Add a pinch of coarse salt. Once boiling, add the garlic scapes and blanch for about 1 minute. Be careful not to overcook, as they can become mushy.

Step 5

Immediately drain the blanched garlic scapes and rinse them under cold water to stop the cooking process. Drain thoroughly in a colander. Ensuring they are well-drained is key for the seasoning to adhere properly.

Step 6

In a bowl, combine the well-drained garlic scapes with your preferred seasoning mixture (soy sauce, sugar, sesame oil, toasted sesame seeds, etc.). (Tip: You can also add minced garlic or a splash of vinegar to taste.)

Step 7

Gently toss and mix the garlic scapes with the seasoning using your hands. Ensure the seasoning is evenly distributed throughout the garlic scapes.

Step 8
