Today, I’m sharing the ‘Chicken Duke’ spicy garlic chicken recipe featured on the TV show ‘How Do You Play?’. This is Park Myung Soo’s version, inspired by Sinpo Dakgangjeong, which he learned and adapted into his own style. I had some leftover fried chicken, and while I was planning to make chicken mayo rice bowls, I decided to switch gears for a late-night snack and make this ‘Chicken Duke’ spicy garlic chicken! I’ve made it before and it was so delicious, I couldn’t resist making it again. It’s simple and perfect for when you have leftover chicken. (I used de-boned chicken, but you can also make it with chicken still on the bone). Let’s make this simple, sweet, and spicy ‘How Do You Play?’ style spicy garlic chicken.
Main Ingredients- Fried chicken, appropriate amount
- Green chili pepper, 1/2 (or more, to taste)
- Red chili pepper, 1/2
- Minced garlic, 2 Tbsp
- Black pepper, to taste
Cooking Instructions
Step 1
First, finely chop the green and red chili peppers into bite-sized pieces. Since I didn’t have a large amount of leftover chicken, I used half of each pepper. If you prefer it spicier, feel free to use more or substitute with a spicier pepper.
Step 2
Now, let’s prepare the sauce for our ‘How Do You Play?’ style spicy garlic chicken. In a bowl, combine 2 Tbsp soy sauce, 1 Tbsp sugar, 8 Tbsp corn syrup, 1 Tbsp oyster sauce, 1 Tbsp gochugaru, and 2 Tbsp minced garlic. (The original Park Myung Soo recipe includes 4 Tbsp apple juice, but you can omit it if you don’t have it; it will still be delicious.)
Step 3
Generously season the sauce with black pepper for added aroma. Stir the sauce well, then bring it to a simmer over medium heat. Cooking over medium heat prevents the sauce from burning and allows the flavors to meld beautifully.
Step 4
Once the sauce reaches your desired consistency, add the fried chicken pieces and the chopped green and red chili peppers. Stir-fry everything together until the chicken is well coated and the flavors are harmonized. If your chicken is cold, you might want to warm it slightly before stir-frying.
Step 5
While the chicken is stir-frying, let’s prepare the crushed peanut topping. Place some roasted peanuts in a plastic bag and crush them using a rolling pin or a heavy object until they are coarsely ground. This adds a lovely nutty texture and flavor.
Step 6
Voila! The ‘How Do You Play?’ spicy garlic chicken is ready. It was incredibly easy to whip up, and the taste is fantastic. It’s perfectly salty, spicy, and sweet, making it an ideal snack or accompaniment to drinks. The flavor is somewhere between a classic sweet and spicy chicken and a Korean fried chicken dish like Dakgangjeong.
Step 7
My husband, tempted by the delicious aroma, opened a can of beer to enjoy with it. Eating it with the fresh green chilies really enhanced the spicy and sweet flavors! If you love heat, consider using a spicier chili pepper instead of the green chili.
