  • 1 Tbsp sugar (for sweetness)

  • 1 Tbsp tuna extract or anchovy sauce (for enhanced flavor)
  • 1 Tbsp sesame oil (for nutty aroma)
  • 1 Tbsp minced garlic (for aroma)

First, prepare the fish cakes. Take about 300g of fish cakes (typically one pack) and slice them as thinly and as long as possible. This ensures they don’t break when rolled and sit nicely inside the kimbap.

In a mixing bowl, combine 2 Tbsp soy sauce, 2 Tbsp red pepper flakes, 1 Tbsp sugar, 1 Tbsp mirin, 1 Tbsp tuna extract, 1 Tbsp sesame oil, 1 Tbsp minced garlic, and 7 Tbsp water. Stir well until all ingredients are smoothly combined, ensuring the sugar is dissolved.

Now it’s time to cook the fish cakes. Heat a lightly oiled pan over medium heat. Add the thinly sliced fish cakes and stir-fry over high heat for a moment until they become slightly translucent. Pour in the prepared glaze and reduce the heat to medium-low. Continue to cook, stirring occasionally, until the glaze thickens and coats the fish cakes beautifully. Finally, stir in 2 Tbsp of corn syrup for extra shine and sweetness, and cook for another moment. Your delicious spicy and sweet fish cakes are ready!

Next, prepare the kimbap rice. Place about 2 to 2.5 bowls of warm cooked rice in a large bowl.
