Ingredients- 1 handful bean sprouts (approx. 100-150g)
- 1.5 cups dashi stock (approx. 300ml)
- 1 Tbsp dried small shrimp (for broth)
- 2-3 spicy chili peppers (adjust to taste)
- A little green onion, finely chopped
- 1/2 Tbsp minced garlic
- 1/3 tsp salt (or a dash of soy sauce for seasoning)
Cooking Instructions
Step 1
First, rinse the bean sprouts thoroughly under running water. Remove any damaged parts or roots to avoid any unwanted smell. Pour 1.5 cups of dashi stock into a pot and add 1 Tbsp of dried small shrimp. Start heating over medium heat, allowing the savory flavor of the shrimp to infuse the broth.
Step 2
Once the broth begins to boil, add the rinsed bean sprouts and cover the pot with a lid. Steaming the bean sprouts with their own moisture will help preserve their crisp texture and refreshing taste. Cook for about 2-3 minutes, just until the bean sprouts soften. Be careful not to overcook them, as they will lose their crispness.
Step 3
When the bean sprouts are cooked to your liking, add 1/2 Tbsp of minced garlic, a small amount of finely chopped green onion, and 2-3 spicy chili peppers, thinly sliced diagonally, for that extra kick. (If you like it spicier, you can include the seeds as well.) Finally, season with 1/3 tsp of salt. Adjust the seasoning with more salt or a dash of soy sauce if needed. Simmer briefly to allow all the flavors to meld together, and your delicious dried shrimp and bean sprout soup is ready!
