Gimbap Ingredients- Dried shredded squid (seasoned)
- Stir-fried beef (bulgogi seasoned)
- Stir-fried carrot
- Egg omelet
- Pickled radish
- Braised burdock root
- Cooked rice
- Salt
- Toasted sesame seeds
- Sesame oil
Cooking Instructions
Step 1
First, prepare the star ingredient for your gimbap: the spicy stir-fried dried shredded squid. Stir-fried with gochujang (Korean chili paste), this squid adds a unique and exciting flavor to the gimbap.
Step 2
Marinate thinly sliced beef in bulgogi seasoning and stir-fry it until all the moisture has evaporated. If you have pre-seasoned bulgogi beef, you can use that for extra convenience.
Step 3
Finely julienne the carrots. Heat a little oil in a pan, stir-fry the carrots until tender-crisp, and season lightly with salt.
Step 4
Beat the eggs and cook a thick omelet. Make sure to prepare enough omelet for your gimbap filling.

For convenience, you can use store-bought pickled radish and braised burdock root sets, which are commonly available in Korean markets. These often come in pairs and are very useful for making gimbap.

Arrange all your prepared gimbap fillings (stir-fried beef, stir-fried squid, egg omelet, stir-fried carrots, braised burdock root, pickled radish) in one place. This makes the assembly process much smoother and also helps with storing any leftovers.

Season the warm cooked rice lightly with salt. Generously mix in toasted sesame seeds and sesame oil. A slightly stronger seasoning in the rice is key to a flavorful gimbap. For an extra boost of flavor, consider adding a pinch of MSG seasoning (often used in store-bought gimbap) for that authentic taste.

In the past, one might have thought a bamboo rolling mat was essential for making perfect gimbap. However, you’ll find that you can easily roll beautiful gimbap without one!

Place a sheet of seaweed, rough side up, on your work surface. Spread the seasoned rice very thinly over about two-thirds of the seaweed. Then, generously layer all your prepared fillings evenly over the rice.

Carefully roll the gimbap tightly, pressing firmly with your hands to shape it. Finally, brush the outside with a little sesame oil and sprinkle with toasted sesame seeds for a glossy, appealing finish.
Step 11
Slice the gimbap into bite-sized pieces, aiming for a slightly thinner cut. Sometimes store-bought gimbap can be quite thick and difficult to eat. Slicing your homemade gimbap thinner can make it much more tender and enjoyable.
