Spicy Crispy Stir-fried Anchovies
A Zesty and Crunchy Side Dish: Stir-fried Anchovies Recipe
I made stir-fried anchovies as a side dish. It’s spicy thanks to the chili peppers and has a delightful crunch. A perfect accompaniment to rice!
Main Ingredients- 2 cups dried anchovies (small)
- 2 Tbsp minced chili peppers (e.g., Cheongyang peppers)
- 2 Tbsp minced red bell pepper
- 2 Tbsp chopped scallions
- 1 Tbsp sesame seeds
Seasoning- 2 Tbsp soy sauce
- 1 Tbsp cooking wine (e.g., Mirin)
- 3 Tbsp oligosaccharide (or corn syrup)
- 2 Tbsp sesame oil

Cooking Instructions
Step 1
First, to remove any fishy smell and enhance crispiness, lightly toast the dried anchovies in a dry pan over low heat. Stir constantly for about 2-3 minutes, ensuring they don’t burn, until their moisture is reduced.
Step 2
Finely mince the chili peppers, red bell pepper, and scallions. The chili peppers add spiciness, the red bell pepper brings color, and the scallions add aroma.
Step 3
In a small pot or pan, combine the soy sauce (2 Tbsp), cooking wine (1 Tbsp), and oligosaccharide (3 Tbsp). Add all the minced chili peppers, minced red bell pepper, and chopped scallions. This sauce will beautifully coat the anchovies.
Step 4
Place the pot with the sauce mixture over medium-low heat. Once it starts to boil, let it simmer for another 1-2 minutes to allow the flavors to meld. When the sauce is bubbling vigorously, turn off the heat. Add the toasted anchovies and toss well to ensure they are evenly coated with the sauce.
Step 5
Finally, sprinkle in the sesame seeds (1 Tbsp) and mix once more. Your spicy, sweet, and crispy stir-fried anchovies are ready! They are delicious served over warm rice or stored in an airtight container in the refrigerator for a ready-to-eat side dish.
