Spicy Creamy Penne Pasta with Olives
Effortless One-Pan Spicy Creamy Pasta with Olives and Cheongyang Pepper
This recipe elevates penne pasta into a delightful dish featuring the rich flavor of olives and a pleasant kick from Cheongyang peppers, all enveloped in a creamy sauce. It’s a simple yet satisfying meal that balances creaminess with a hint of spice, perfect for any occasion.
Ingredients- 2 servings Penne pasta
- 600ml Water
- 600ml Milk
- 40g Butter
- 1.5 Tbsp Minced garlic
- 1 Cheongyang pepper (or a spicy chili pepper)
- 7 Black olives
- 0.5 Tsp Salt
- 3 Tbsp Fish sauce (or anchovy sauce)
- A pinch of dried parsley flakes
- A sprinkle of grated Parmesan cheese
Cooking Instructions
Step 1
In a wide pot or deep pan, combine 600ml of water and 600ml of milk. This liquid base will form the creamy sauce.
Step 2
Measure out 2 servings of penne pasta. For reference, one serving is often equivalent to about one bowl of cooked rice, so roughly 200g in total.
Step 3
Add all the penne pasta to the pot. Gently stir to prevent the pasta from clumping together as it cooks.
Step 4
Add the 40g of butter. As the butter melts, it will coat the pasta, adding a wonderful richness and depth of flavor.
Step 5
Finely chop 1 Cheongyang pepper to introduce a spicy element. You can adjust the amount based on your preferred level of heat.
Step 6
Pit and slice the 7 black olives into rings, resembling small tires.
Step 7
Turn on the heat to medium. Once the liquid begins to simmer, add 1.5 Tbsp of minced garlic and stir well to release its aromatic fragrance.
Step 8
Add 0.5 Tsp of salt for basic seasoning.
Step 9
For a boost of umami and to cut through richness, add 3 Tbsp of fish sauce (or anchovy sauce). This ingredient adds savory depth and prevents the sauce from being too heavy. (If unavailable, soy sauce can be a substitute, though it will alter the flavor profile).
Step 10
As the pasta cooks and the sauce begins to thicken slightly, stir in the chopped Cheongyang pepper. Allow its spicy aroma to infuse the sauce.
Step 11
Add all the sliced black olives. Continue to simmer over medium-low heat, stirring occasionally, until the sauce reaches your desired consistency. The sauce should cling beautifully to the pasta.
Step 12
Transfer the finished spicy creamy pasta to a serving bowl. Sprinkle with dried parsley flakes for a touch of color and freshness.
Step 13
Finish with a generous dusting of grated Parmesan cheese. This adds a salty, nutty flavor that complements the creamy and spicy notes perfectly.
Step 14
Enjoy your delicious, easy-to-make one-pan spicy creamy pasta with olives! It’s a restaurant-worthy dish made effortlessly at home.
