The weather is getting colder and colder. Brrr. Today, I’ve made a wonderfully savory and spicy cod soup with its tender, delicious flesh. It really feels like a hot soup is the best when the cold wind starts blowing! ^~^~♥
Main Ingredients- 1 whole Cod or Pollock (Dae-gu or Dong-tae)
- Cod roe and gonads (milt), as desired
- 1.5 handfuls of Soybean Sprouts
- 1 stalk of Scallion (Green Onion)
- 4 hot Korean Green Chili Peppers (Ttaeng-cho)
Seasoning- 3 Tbsp generous Korean Red Pepper Flakes (Gochugaru)
- 1.5 Tbsp Minced Garlic
- 1 Tbsp Soup Soy Sauce (Guk-ganjang)
- 1 Tbsp Fish Sauce (Myeolchi-aekjeot)
- 4 pinches of Black Pepper
- Salt, to taste (for final seasoning)

- 3 Scallion Roots (Pa-ppuri)
- 1 Anchovy Broth Pack (Dashima pack)
- 2 Dried Shiitake Mushrooms (Geon-pyogo)
- 3 Tbsp generous Korean Red Pepper Flakes (Gochugaru)
- 1.5 Tbsp Minced Garlic
- 1 Tbsp Soup Soy Sauce (Guk-ganjang)
- 1 Tbsp Fish Sauce (Myeolchi-aekjeot)
- 4 pinches of Black Pepper
- Salt, to taste (for final seasoning)

Cooking Instructions
Step 1
[This recipe yields approximately 3-4 servings. The amount of water is flexible and can be adjusted to your preference. This recipe is based on a 26cm wide pot.] Prepare the broth, which is the foundation of a delicious cod soup. In a pot, add water along with a 5cm piece of radish, 2 dried shiitake mushrooms, 1 anchovy broth pack, and 3 well-rinsed scallion roots. Simmer to extract a deep, flavorful broth. 🙂
Step 2
While the broth is simmering, thoroughly rinse the cod, remove any scales and innards, and pat it completely dry with paper towels. (The preparation is very similar to pollock soup. ^~^)
Step 3
Prepare about 1.5 handfuls of fresh soybean sprouts. These will add a refreshing taste and a pleasant crunch to the soup.
Step 4
Optionally, you can add about a handful of Omandungi (a type of sea squirt or sea finger). Although they may look a bit wrinkled, Omandungi have a wonderfully chewy texture and savory flavor that greatly enhances pollock or cod soup. (This ingredient is optional and can be omitted.)
Step 5
Slice 4 hot Korean green chili peppers diagonally to add a spicy kick to the broth. Chop 1 scallion stalk into large, bite-sized pieces. Also, have 1.5 tablespoons of minced garlic ready.
Step 6
Once the broth has developed a rich flavor, remove the anchovy pack and scallion roots. Add 3-4 tablespoons of Korean red pepper flakes to create the spicy base. Then, stir in 1 tablespoon of soup soy sauce and 1 tablespoon of fish sauce for added umami. (Avoid seasoning too heavily at this stage; we’ll adjust the final taste with salt later. If the soup volume seems large, you can add an extra tablespoon of soup soy sauce.)
Step 7
When the broth begins to boil, carefully add the prepared cod pieces, cod roe, and gonads. Do not stir to prevent the fish from breaking apart. Wait until the soup comes to a boil again. ^~^
Step 8
As the soup returns to a boil, add the 1.5 handfuls of soybean sprouts. Sprinkle 4-5 cracks of black pepper to eliminate any fishy odors. Add the 1.5 tablespoons of minced garlic at this point.
Step 9
Reduce the heat to medium and simmer gently until the soybean sprouts are cooked through. Be careful not to break the fish while stirring; gently swirl the pot or use a spatula to stir very carefully just once.
Step 10
Finally, add the sliced scallions and hot peppers, and let it simmer for another moment. Taste the soup and adjust the seasoning with salt as needed. Your delicious cod soup is now ready! ^^

For this recipe, it’s best to keep the lid off the pot from start to finish to achieve a clear and deep flavor. ^~^ I was so hungry preparing dinner late today that I forgot to take a separate photo of the finished dish! ㅠ.ㅠ Trust me, even though the photos might not do it justice, if you follow these steps precisely, you’ll end up with an incredibly delicious cod soup with an outstanding broth!!!
