This recipe offers a delightful chive and dumpling soup infused with a spicy mala sauce, cutting through any lingering richness and leaving you craving more. Ingredients- Chive dumplings (store-bought) – sufficient amount
- Fish cakes (square type) – sufficient amount
- King oyster mushroom – a little (or other mushrooms)
- Shiitake mushroom – 1
- Onion – 1/4
- Cilantro – 2 sprigs
- Green onion – 1/2 stalk
- Mala sauce – 3 Tbsp
Cooking Instructions
Step 1
Start by preparing a flavorful broth. For a 2-serving portion, bring about 800ml of water to a boil with 7 large dried anchovies and 4 pieces of dried kelp (cut). Simmer to create a clear, savory broth. (Tip: Adding beef can enrich the broth’s flavor, but this anchovy-kelp base is delicious on its own.) Once brewed, strain out all the solids, leaving you with a clean broth.
Step 2
Prepare the dumplings and fish cakes. Using store-bought chive dumplings makes this soup quick and easy to prepare. Cut the fish cakes into bite-sized pieces or your desired shape.
Step 3
Chop the aromatic vegetables. Prepare about 2 sprigs of cilantro. Remove the stems from the shiitake mushroom and slice it thinly. Slice the onion into thin strips, and cut the king oyster mushroom (or your chosen alternative) into similar sizes. (Tip: Enoki mushrooms are also a fantastic addition!)
Step 4
Add the chive dumplings and fish cakes to the prepared broth and bring to a simmer. Stir occasionally to prevent the dumplings from sticking to the bottom.
Step 5
Once the dumplings begin to cook, stir in the mala sauce. For a 2-serving portion, 3 tablespoons provide a well-balanced, pleasantly spicy flavor. Feel free to adjust the amount of mala sauce to your preference.
Step 6
When the dumplings are fully cooked, just before turning off the heat, add the diagonally sliced green onions. The fresh, mild flavor of the green onions will infuse the soup, enhancing its taste.
Step 7
