  • 2 eggs

  • 3 Tbsp chili powder
  • 3 Tbsp ketchup
  • 3 Tbsp sugar
  • 1 Tbsp water
  • 1/2 tsp black pepper (adjust to taste)

First, rinse the shrimp thoroughly and pat them dry. In a bowl, whisk the eggs until well beaten. Prepare three separate dishes: one with all-purpose flour, one with the beaten eggs, and one with panko breadcrumbs. Dredge the dried shrimp in flour, shaking off any excess. Then, dip them into the beaten egg, ensuring they are fully coated. Finally, roll the shrimp in panko breadcrumbs, pressing gently to help the crumbs adhere. This ensures a crispy coating when fried.

Heat a generous amount of cooking oil in a frying pan over medium-high heat. Carefully add the breaded shrimp and fry until golden brown and cooked through, about 2-3 minutes per side. Remove the fried shrimp and place them on a paper towel-lined plate to drain excess oil. While the shrimp are frying, prepare the sauce. In a small saucepan, combine the chili powder, ketchup, sugar, water, salt, and black pepper. Stir well and bring to a simmer over medium-low heat.
