If your kimchi is too sour, you can gently rinse it under cold water, squeeze out excess moisture, and then proceed with cooking to adjust the spiciness and tanginess.

Heat a generous amount of olive oil in a pan. Add the chopped kimchi and stir-fry until fragrant and slightly softened. If the kimchi is particularly sour, adding a little sugar at this stage will help neutralize the acidity, resulting in a smoother flavor.
