Step 1

Let’s start by making the ‘Spicy Cham-Gan-Cho Sauce,’ the heart of this delicious bibim-myeon. This sauce, named after its core ingredients – sesame oil (cham-gireum), soy sauce (ganjang), and vinegar (cho) – is a popular recipe introduced by Chef Ryu Soo-young. For one serving, prepare 3 tablespoons of sesame oil, 3.5 tablespoons of soy sauce, 2 tablespoons of vinegar, 2 tablespoons of sugar, and a pinch of sesame seeds. To add a spicy flavor, we’ll mix in 2 tablespoons of gochugaru.
