I’ve always enjoyed cabbage fried rice, and this recipe was born out of curiosity about how it would taste with ‘King Oyster Mushroom Gwanji No. 7’. This dish harmonizes the chewy texture of the mushrooms, the sweetness of the cabbage, and the pleasant spiciness of the chili peppers, making it incredibly satisfying. Main Ingredients- 2 leaves cabbage
- 1 handful King Oyster Mushroom Gwanji No. 7 (approx. 50g)
- 1 bowl warm cooked rice
- 1/2 Korean chili pepper (Cheongyang pepper)
Cooking Instructions
Step 1
First, let’s prepare the main ingredients for the fried rice. Remove the core from the cabbage and slice it into 0.5cm thick strips. Trim the tough ends of the King Oyster Mushroom Gwanji No. 7 and tear them into bite-sized pieces (about 2-3cm). Finely mince the Korean chili pepper. (If you prefer it spicier, you can leave the seeds in.)
Step 2
Let’s make the key to delicious fried rice: the seasoning sauce! In a small bowl, combine 1.5 Tbsp soy sauce, 3 Tbsp oyster sauce, 0.5 Tbsp minced garlic, 1 Tbsp corn syrup, and a pinch of black pepper. Mix well. Preparing the sauce beforehand makes it easy to add when you’re stir-frying.

Heat a skillet over medium heat and add about 1-2 Tbsp of cooking oil. Add all the prepared cabbage and stir-fry until it becomes translucent and tender. This process brings out the natural sweetness of the cabbage and improves the texture of the fried rice.
