  • 1/2 medium onion
  • 1/2 medium potato
  • 2-4 Cheongyang peppers (adjust to your spice preference)
  • 1 stalk green onion

Seasoning

  • 3 Tbsp soy sauce
  • 3 Tbsp gochugaru (Korean chili flakes)
  • 2 Tbsp cooking wine (mirin or rice wine)
  • 2 Tbsp oligosaccharide (adjust sweetness)
  • 100ml water
  • 1 tsp sesame oil
  • 1 Tbsp minced garlic (for marinating pork)
  • Pinch of black pepper (for marinating pork)

Cooking Instructions

Step 1

First, let’s make the key to delicious braised tofu: the seasoning sauce! In a bowl, combine 3 Tbsp soy sauce, 3 Tbsp gochugaru, 2 Tbsp cooking wine, 2 Tbsp oligosaccharide, and 100ml water. Mix well until combined. For the ground pork (150g), add 1 Tbsp minced garlic and a pinch of black pepper, then mix thoroughly. This step will remove any pork odor and enhance the flavor.

Next, prepare the tofu. Cut the 120g of tofu into long rectangles, then cut each rectangle in half to create bite-sized pieces (usually 4 pieces per block). You can adjust the size of the tofu pieces to your preference. Avoid cutting them too thinly, as they might break apart during cooking.

Now, it’s time to chop the vegetables. Slice the 1/2 onion into strips. Peel the 1/2 potato and slice it thinly into half-moon shapes. Thinly slicing the potato helps it absorb the sauce better and cook faster, making it more delicious. Slice 2-4 Cheongyang peppers diagonally; add more if you like it spicier. Slice the green onion stalk diagonally and set aside.

Heat a pan over high heat. Add the marinated ground pork and stir-fry quickly. Use chopsticks or a spatula to break up the meat as it cooks, ensuring it doesn’t clump together. Cook just until the pork is no longer pink on the outside.

Once the pork is partially cooked, add the sliced onion and potato to the pan. Stir-fry over medium heat until the vegetables become slightly translucent. Sautéing the vegetables first brings out their natural sweetness and enhances the overall flavor. (Do not add the green onion yet.)

When the vegetables are somewhat softened, pour in all the prepared seasoning sauce and stir gently to combine with the ingredients. Then, add 100ml of water and bring to a boil, allowing the sauce to coat all the ingredients evenly. Stir occasionally to prevent the sauce from sticking or burning.

Once the sauce starts boiling, carefully add the sliced tofu. Stir gently to avoid breaking the tofu. Let it simmer over medium-low heat for about 5-7 minutes, or until the sauce has reduced and thickened, coating the tofu beautifully. The tofu will absorb the delicious flavors of the sauce as it simmers.

Finally, add the diagonally sliced green onion and simmer for another minute. Once the fragrant aroma of the green onion is released, turn off the heat and drizzle 1 tsp of sesame oil over the dish as a finishing touch.
