Main Ingredients
  • 1 block tofu (approx. 150g)
  • 2 packs enoki mushrooms (small size)
  • 1/3 stalk green onion or 1 stalk scallion
  • 2 Korean green chilies (cheongyang pepper)
  • 1/2 onion

Seasoning Ingredients
  • 1 Tbsp soy sauce for soup (guk-ganjang)
  • 1 Tbsp sesame oil
  • 2 Tbsp soy sauce (jin-ganjang)
  • 1 Tbsp fish sauce (anchovy or tuna extract)
  • 2 Tbsp cooking wine (mirin or similar)
  • 2 Tbsp corn syrup or honey
  • 3 Tbsp red pepper flakes (gochugaru)
  • 1 Tbsp minced garlic

Cooking Instructions

Step 1

First, cut the block of tofu into bite-sized pieces (about 1.5cm thick). Sprinkle 2-3 pinches of salt over the cut tofu to season it. This step helps the tofu absorb flavor and become more delicious.

Step 2

Prepare half an onion by thinly slicing it into matchsticks. In a bowl, combine the sliced onion with 1 Tbsp soy sauce for soup and 1 Tbsp sesame oil. Mix well by gently tossing. Seasoning the onion this way enhances its natural sweetness and adds depth of flavor.

Step 3

Finely mince the 2 Korean green chilies for a spicy kick. Slice the green onion or scallions thinly. These will serve as a garnish, adding color and aroma.

Step 4

Heat a frying pan over medium heat and add a generous amount of cooking oil. Place the seasoned tofu pieces in the pan and fry them until golden brown on both sides. Frying the tofu makes it firmer, preventing it from breaking apart during braising and giving it a chewier texture.

Step 5

Push the fried tofu to one side of the pan, creating space in the center. Add the thinly sliced and seasoned onion to this space and sauté until it becomes translucent and fragrant. Sautéing the onion further develops its sweetness.

Step 6

Now, let’s prepare the braising sauce. In a separate bowl, combine 2 Tbsp soy sauce, 1 Tbsp fish sauce, 2 Tbsp cooking wine, 2 Tbsp corn syrup, 3 Tbsp red pepper flakes, and 1 Tbsp minced garlic. Mix them well. Pour half of this prepared sauce into the pan over the sautéed onions and tofu. Stir gently to allow the ingredients to absorb the initial seasoning.

Step 7

Spread the enoki mushrooms evenly over the top of the tofu and onions. Pour the remaining sauce and 1/2 cup (100ml) of water into the pan. Cover the pan with a lid and continue to cook over medium heat for another 3-4 minutes. This allows the flavors to meld and the sauce to thicken beautifully. The delicious braised tofu and enoki mushrooms will be complete. For an extra touch, sprinkle the chopped green onions and chilies on top before the final few minutes of cooking.
