Ingredients

  • 3 fresh saury fish
  • 1 medium potato
  • 30g onion (about 1/4 medium)
  • 1/2 green onion stalk

Braising Sauce

  • 1 Tbsp soup soy sauce (Guk-ganjang)
  • 2 Tbsp regular soy sauce (Jin-ganjang)
  • 0.5 Tbsp red pepper paste (Gochujang)
  • 2 Tbsp red pepper flakes (Gochugaru)
  • 1 Tbsp minced garlic
  • 1 tsp grated ginger
  • 1 cup rice water (200ml)
  • 1 Tbsp corn syrup (Oligodang)
  • 2 Tbsp plum extract (Maesilcheong)
  • 1 Tbsp cooking wine (Mirin)
  • 1 Tbsp cooking oil
  • Pinch of black pepper
  • Pinch of sesame seeds

Cooking Instructions

Step 1

Prepare all the ingredients for a delicious braised saury dish. Wash and get your fresh saury, potatoes, onion, and green onion ready.

Peel the potatoes and cut them into bite-sized pieces, roughly the same size as the saury or about 2-3 cm cubes. Slice the onion thinly or chop it coarsely. Cut the green onion stalk diagonally.

Rinse the fresh saury thoroughly under running water. Remove the guts and fins. Cut each saury in half. Make 2-3 shallow slits on the side of each saury piece to help the sauce penetrate better. To reduce any fishy odor, briefly rinse them in water with 1 Tbsp of vinegar for about 2-3 minutes, then drain well.

Now, let’s make the flavorful braising sauce. In a bowl, combine the soup soy sauce, regular soy sauce, red pepper paste, red pepper flakes, minced garlic, grated ginger, corn syrup, plum extract, cooking wine, cooking oil, and black pepper. Stir everything together thoroughly with a spoon until well combined.

In a pot or a deep pan, arrange the cut potatoes at the bottom. Place the prepared saury pieces on top of the potatoes. Pour the prepared braising sauce evenly over the saury. Finally, pour 1 cup of rice water around the edges of the pot. (You can substitute rice water with kelp or anchovy broth if you prefer.)

Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to medium-low, cover the pot, and let it simmer for about 15-20 minutes until the sauce has reduced and the flavors have melded. Gently shake the pot occasionally or spoon some sauce over the saury to ensure even cooking and prevent sticking. Cook until the potatoes are tender and the saury has absorbed the sauce well. Add the sliced green onion and onion, and continue to cook for another 2-3 minutes. It’s best to cook the onion until it’s slightly crisp.

Once the sauce has thickened to your desired consistency and the flavors have infused into all the ingredients, your delicious Braised Saury is ready! Sprinkle with sesame seeds as a final touch. This recipe is convenient as it uses rice water for a rich flavor without needing to make a separate broth. Serve it over warm rice for a truly satisfying meal!
