Main Ingredients- 2 medium potatoes
- 1/4 onion
- 1/2 green onion (scallion)
- 2 Tbsp cooking oil
- 1 paper cup kelp broth (approx. 200ml)
- A pinch of toasted sesame seeds (for garnish)
Spicy Seasoning Mix- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp Cheongyang chili powder (adjust spiciness to your liking)
- 1 Tbsp soy sauce
- 1/2 Tbsp minced garlic
- 1 Tbsp sesame oil

Cooking Instructions
Step 1
First, wash the potatoes thoroughly and then slice them into thick rounds, about 1.5-2 cm thick.
Step 2
Place the sliced potatoes in a bowl of cold water mixed with a little salt and let them soak for about 10 minutes to remove excess starch. This step helps prevent the potatoes from breaking apart during braising and allows the sauce to penetrate better.
Step 3
Thinly slice the onion and cut the green onion into diagonal pieces to add a fresh aroma.
Step 4
Heat 2 Tbsp of cooking oil in a pan over medium-low heat. Add the drained potatoes and stir-fry until their surfaces are lightly golden. Sautéing them first enhances their flavor and helps them maintain their shape after braising.

Add the prepared seasoning mix (gochujang, Cheongyang chili powder, soy sauce, minced garlic, sesame oil) and 1 paper cup of kelp broth to the pan with the sautéed potatoes.
