This dish is incredibly simple to prepare, guaranteed to be delicious, and has a very low chance of failure. Perfect for a warming meal.
Main Ingredients- 1 can of mackerel (use the entire can, including the liquid)
- 100g aged kimchi
- 1 tsp minced garlic
- 2 tsp gochugaru (Korean chili powder)
- 2 tsp sugar
- 1/4 onion, thinly sliced
- A pinch of chives, chopped

Step 1
Let’s make a warming and delicious braised dish of aged kimchi and mackerel, perfect for these chilly days.

You can roll the aged kimchi around the mackerel and simmer it, but today, I’ll be cutting the aged kimchi into bite-sized pieces for easier eating. First, spread the chopped aged kimchi at the bottom of a pot. Add about 3-4 tablespoons of the kimchi juice – this adds a deep flavor to the stew.
Step 3
Open the canned mackerel and add both the fish and its liquid to the pot. Don’t discard the mackerel liquid; it’s already seasoned and will greatly enhance the savory taste of the stew.

Now it’s time for the seasonings. To the pot with kimchi and mackerel, add 1 teaspoon of minced garlic, 2 teaspoons of gochugaru, and 2 teaspoons of sugar. Mix well. This creates the delicious base for our braised dish.

Bring the pot to a simmer over medium heat. Once the liquid starts to reduce slightly and the flavors begin to meld, add the thinly sliced onion. The onion will add a natural sweetness and a pleasant texture.
