  • 1/2 head of well-fermented kimchi
  • 1 green chili pepper
  • 1 red chili pepper

  • 1/2 stalk of green onion
  • 1/2 Tbsp whole peppercorns

Seasoning for Braised Chicken with Kimchi

  • 2 Tbsp fish sauce or Korean soup soy sauce
  • 2 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp sugar
  • 1 Tbsp minced garlic
  • 2 Tbsp cheongju (rice wine) or cooking wine
  • 1 Tbsp mirin or cooking wine

Cooking Instructions

Step 1

First, trim off the fatty skin from the chicken using scissors and rinse it thoroughly under running water. This is the initial step to minimize any gamey smell from the chicken.

In a large bowl, combine gochugaru, fish sauce (or soup soy sauce), sugar, minced garlic, cheongju (or cooking wine), and mirin (or cooking wine). Mix well with a spoon to create the seasoning paste. Ensure all ingredients are evenly incorporated.

To remove the chicken’s odor, place the chicken in a pot along with the ingredients for the first blanching: onion, green onion, and whole peppercorns. Add enough water to cover them. Blanch for about 10-15 minutes, or until the chicken meat turns white. Then, carefully remove only the chicken, drain it, and discard the blanching water.
