Flavorful Bok Choy and Shrimp Fried Rice Stir-fried with Aromatic Chili Oil
This is a delicious fried rice featuring bok choy and shrimp, stir-fried with a touch of spiciness from chili oil. It’s a satisfying and tasty dish, perfect for a quick and hearty meal.
Main Ingredients- 1.5 bowls of cooked rice
- 2 heads of fresh bok choy
- Approx. 7 large shrimp
- 1 fresh egg
- 3 Tbsp chili oil
- 1 handful of minced garlic
- 2 Tbsp soy sauce
- A pinch of black pepper
- A pinch of salt
Shrimp Marinade- 1 tsp cooking wine (or Mirin/Sake)

Cooking Instructions
Step 1
Prepare all your ingredients. Wash the bok choy thoroughly and chop it into bite-sized pieces. Peel and devein the shrimp. Cut the shrimp into manageable pieces and place them in a bowl. Add 1 tsp of cooking wine (or Mirin/Sake) and a dash of black pepper. Gently mix to marinate the shrimp.
Step 2
Crack the egg into a separate bowl and whisk it well. Lightly oil a non-stick pan over medium-low heat. Pour in the whisked egg and stir gently with chopsticks to create fluffy scrambled eggs. Once cooked, transfer the scrambled eggs to a plate and set aside.
Step 3
Using the same pan (no need to wash), reduce the heat to low. Add 3 Tbsp of chili oil and 1 handful of minced garlic. Stir-fry slowly to create an aromatic garlic oil. Be careful not to burn the garlic; let its fragrance infuse the oil.
Step 4
Once the garlic aroma is released, turn the heat up to high. Add the marinated shrimp to the pan and stir-fry for about 2 minutes until they turn pink and are almost cooked through.

Next, add the chopped bok choy to the pan. Stir-fry quickly for about 30 seconds. Bok choy cooks very fast, so stir-frying briefly will keep it crisp and vibrant.
Step 6
At this stage, I added some finely chopped onion and carrot that I had on hand, just to use them up! This step is optional, so feel free to skip it or add other leftover vegetables if you have them.
Step 7
Once the ingredients are somewhat sautéed, add 1.5 bowls of warm cooked rice. Reduce the heat to low and use a spatula to gently break up any clumps of rice, mixing it evenly with all the other ingredients.
Step 8
After the rice is well mixed, turn the heat back up to high. Pour 2 Tbsp of soy sauce around the edges of the pan. This allows the soy sauce to caramelize slightly against the hot pan, imparting a wonderful ‘wok hei’ or smoky flavor to the fried rice.
Step 9
Listen for the sizzle as the soy sauce hits the hot pan. Once it starts to bubble and brown slightly, stir it into the rice mixture, ensuring every grain is coated.
Step 10
Add the prepared scrambled eggs back into the pan. Gently mix them into the fried rice. Be careful not to break them up too much, allowing them to distribute nicely.
Step 11
Finally, sprinkle with black pepper to taste. Taste the fried rice and add a pinch of salt if needed to adjust the seasoning. Your delicious Bok Choy and Shrimp Fried Rice is now ready to be enjoyed!
